People are lining up for sandwiches in Melbourne—and not just any sandwich, but kaldereta, lechon, and bulalo “sangas” 🇵🇭 Chefs Ross Magnaye (@magnayerosschef) and Shane Stafford (@shaneroystafford) of Serai, the award-winning Australian-Filipino restaurant in Melbourne, debut their sophomore concept: @panaderia.serai, a Filipino “sanga” shop along Hardware Lane. “It’s a modern Filipino sanga place,” says Magnaye. “It’s basically Serai in a sandwich, some Pinoy pastries, and Pinoy kape.” Think lamb shoulder kaldereta, bulalo with bone marrow butter, and pork belly lechon with smoked pineapple palapa, all served in fluffy pan de sal, alongside sides like adobo salt fries and chicken skin chicharon. On the sweet side: Spanish bread, choc crinkles, and a calamansi doughnut that’s already selling out within the hour. The verdict is in: @helmmnl’s new tasting menu is @chefjoshboutwood’s best to date 🏆 Certainly among the most coveted tables in the country, Helm by Josh Boutwood (Tatler Best Asia 100) continues to surpass expectations with their newest tasting menu: Single Ingredient. The 11-course degustation comes off the back of the Monochromatic menu, wherein each dish zoned into one colour. Their latest offering raises the bar, asking: How much can we do with a single ingredient? Each course serves as a study into the featured ingredient—pumpkin, lobster, and chocolate among them. “Having that hyperfocus on one ingredient really challenged us,” Boutwood admits. “We had to figure out different textures, different cooking processes, ways to bring out additional flavour and different nuances of a particular ingredient to really make the menu sing.” The challenge was no match for Boutwood and his team. Thoughtful details like pumpkin XO, crustacean sabayon, and beef bone sauce with marrow and Bordeaux reward the diners who pay close attention. Yet, the menu never chases creativity at the cost of deliciousness; the result is an experience that is utterly delightful, or as Boutwood himself says, “once in a lifetime.” 🍽️ Book your seats at Helm by Josh Boutwood, The Shops at Ayala Triangle, Makati City to try the Single Ingredient menu.
