Restauranteurs Nowie and Odette Potenciano open their first boutique hotel in the premier island destination housing three signature F&B concepts

To say it was a challenging past few years for Boracay Island would be an understatement. Plagued with temporary closures to address environmental issues and then followed by lockdowns due to the COVID-19 pandemic that put global travel at a standstill, the once burgeoning tourism in the Philippines’ most popular destination took a hit.

However, the arbitrary break did have its advantages. The sudden stillness gave the island the rejuvenating respite it needed, bringing back its pristine sheen and a renewed sense of order in the prime strip of establishments along the famous White Beach. For restauranteur couple Nowie and Odette Potenciano who have been doing business in the island for 17 years (they launched their first restaurant, all-day breakfast joint and bakery The Sunny Side Cafe, eight years ago in 2014), the closure also opened doors to unsuspected opportunities. “For example, in 2021, a space became available for Spicebird (their grill concept specializing in Piri-Piri) and we were able to move it to a bigger and better location within D’Mall,” Nowie says. “We also found another space for The Sunny Side Cafe in Station 1 and we’re currently in the process of fitting that out, hopefully opening in May.”

A similar opportunity came for their newest venture—their first boutique hotel called Seaworthy. “We were offered a hotel with a restaurant space at the ground floor. While it’s still a bit of a risk, it was an opportunity too difficult to pass up. Since we’re opening The Sunny Side Cafe in Station 1 soon, it made sense to increase our footprint in that area,” admits Nowie. He describes their latest baby to be “cosy and comfortable” with just seven rooms right by the beach in the middle of White Beach’s stretch of powder-fine sand, right in from of the iconic Willy’s rock and a short stroll to restaurants nearby.

Still, their guests never really need to go far for sustenance and recreation. Aside from their other concepts on the island which include Supermagic (Wagyu burgers, ice cream), Coco Mama (vegan ice cream), and The Sunny Side Pizza, they also plan to operate three food and beverage outlets within Seaworthy. First, there’s Percy Seafood, named after Perseus, the Greek god of the sea, where they will be serving Asian and western dishes inspired by their travels. Nowie excitedly shares what guests can expect from the seafood concept helmed by The Sunny Side Group executive chef Natalia Moran: “For example, we have a rich royal seafood tagine with prawns, fish, mussels, and squid smothered in harissa and preserved lemons. Packed with flavour, it was inspired by a trip to Morocco. We also have tasty Thai curry crab that captures memories of a similar dish we always have in Bangkok. A seafood cioppino with the best of the sea in a rich, tomato stew was inspired by those we had on a road trip across California.”

To complement Percy and accompany guests during those legendary Boracay sunsets, the Potencianos called upon David Ong (The Curator, Oto) to develop the menu and bar program of Hello Sailor, a craft and cocktail bar inspired by tropical fruits and botanicals. For dessert, they are also opening a branch of Coco Mama within the property to provide guests with their famous vegan-friendly coconut ice cream—guilt-free sweet treats that can be enjoyed any time of the day. Hotel guests also get exclusive access to their Sunset Lounge, a common area where they will serve afternoon tea every day with front-row seats to the best show in town.

With the country welcoming foreign tourists back and the economy enjoying the boost from the cautious reopening of businesses, Boracay’s entrepreneurs are reinvigorated with the promise of a return to normal. The Potencianos share their optimism and put all their energy back into the island that has given them so much. While they enjoyed the support and love of their Manila-based fans at their pop-ups during the lockdowns, Boracay is irreplaceable for the couple. Nowie explains: “We feel that the restaurants we created for Boracay very much have the island vibe. There’s an intrinsic sense of place in all of them and it’s difficult to entirely remove them from Boracay. Apart from that, we had so many employees left in Boracay displaced by the pandemic that it was never of a question of if we’ll reopen on the island but more of when. And now that all our restaurants open again, we’re happy to say that all of our employees who wanted to return are now back with us.” 


Please note that the hotel is still closed but all the F&B outlets are open for business.
