Exclusive dining experiences, four-hands dinners and anniversary celebrations are on the list of dining spots to hit this week

So many exciting things happen in the dining scene every week, but few are as special as celebratory experiences marked by titillating chef collaborations and exclusive, limited menus that you won’t find at any other time.

Take Tippling Club, which is celebrating its 15th anniversary with one-day-only lunch and dinner menus crafted by chef-owner Ryan Clift. Or head down to Pan Pacific Orchard, which has signed a partnership with teaware manufacturer Wedgwood to deliver a tropical afternoon tea.

Collaborations are abound this week, with four-hands dinners at Gaig for a summer feast, and Pangium, which is hosting famed Bangkok restaurant Sorn. End the week at Rumours Beach Club, which is also working with handroll bar Rappu for a fun-filled evening at the beach.

1. Tippling Club

Join Tippling Club as it celebrates its 15th anniversary on August 15. Chef-owner Ryan Clift has prepared exclusive lunch and dinner menus to celebrate the occasion, and on the menu are the likes of French toast with chicken tikka parfait, lime and yoghurt gel, and the foie gras mont blanc, an unheard-of take on the classic dessert with apricot and green yuzu. Look out for the pot-au-feu, an impossibly tender, slow-boiled cut of Wagyu served with daikon and kombu consommé. Wash it down with cocktails crafted by head bartender Arathorn Grey.

Those seeking authentic Catalan flavours have always found a welcome place at Gaig, the only international outpost of founder chef Carles Gaig’s eponymous restaurant. Now, the treasures of the Catalan summer come alive on August 17 and 18 as chef Gaig returns to Singapore to cook with executive chef Martí Carlos Martinez. Titled “A Summer Night in Barcelona”, the six-course dinner will feature late summer seasonal ingredients in beautiful presentations like the arròs verd, a Valencian paella coloured green by the extract of the locally-sourced ice plant in a flavourful fish stock and served with sea urchin and battered sea anemones. The star of the menu is undoubtedly the mar i muntanya, literally “sea and mountain” in Catalan, combining land produce (guinea fowl stewed with tomato and red wine) and sea produce (deep-fried Canadian lobster in lobster bisque).

Find out at Pangium, where chef-owner Malcolm Lee is joining hands with chef-owner Supaksorn “Ice” Jongsiri of the famed Sorn in Bangkok for an exclusive dinner from August 18 to 19. Though the cuisines of Southern Thailand and the Straits of Malacca seem wildly disparate, Lee and Jongsiri will work to show and complement their similarities and take you on a journey throughout Southeast Asia.
