The local chef is all set to welcome diners to Pangium this summer with a tasting menu that celebrates Contemporary Straits cuisine

We can expect more great things from Candlenut chef-owner Malcolm Lee this year, as he gears up to open Pangium—his second restaurant under Como Group. Named after the tree that grows from the buah keluak seed, Lee will serve up a tasting menu that celebrates Contemporary Straits cuisine. This is rooted in the ethos of discovery and creativity that inspired our grandparents to get creative with their cooking using what ingredients and tools they had.

The restaurant will be located at The Orangery at the Gallop Extension of the Singapore Botanic Gardens, and Lee shared that it was done with intent. Lee elaborated that “the intimate nature and location of Pangium gives us the opportunity to delve deeper into our heritage and cuisine, as well as explore the creative side of where we can go from here”.

Moreover, the heritage national park which was established in 1859 is now a spectacular contemporary botanic garden. “We are inspired by the multiple roles of recreation, conservation and discovery it plays in our community,” added Lee.
