Dylan Ong is the man behind this popular Franco-Asian restaurant at The Capitol Kempinski. Why popular? Because Ong is for the people. Hell-bent on going against the grain, the Singaporean chef vows to keep serving quality food at accessible prices despite tumultuous times in Singapore’s restaurant industry. So much so that his Franco-Asian fare amassed a cult following. In his 150-seater restaurant, guests can expect a rotating menu that is both progressive and colloquially approachable. Calling all mud crab devotees, a meal in Sri Lanka’s mightiest crustacean export Ministry of Crab is sheer indulgence. Taking over an old Dutch hospital, the cavernous restaurant in Dempsey is its sixth international outpost where only the best catch of the day makes it to your table—the restaurant’s “no-freezer” policy maintains the highest of standards. Past the unassuming wooden door, Moga, an emphatic amalgam between speakeasies from the Prohibition Era and izakayas from 1920s Japan, transports one to the alleyways of Tokyo. The interior of the modern Japanese concept is tastefully flashy, with inventive sharing plates that feature modern interpretations of izakaya classics such as the Moga samurai roll and crispy kakuni pork belly.
