Few bakeries in Singapore have spaces as communal as Chū and Co. For founders Rui and Ling, enjoying a fresh bake is as laid-back as sitting on the ledge of their backyard. And quite literally so. The bakery’s spacious backyard is where many diners flock to after grabbing (typically a tray full) fresh loaves of bread and pastries. Marymount Bakehouse made its name by serving sourdough loaves from a humble home-based business. Today, it showcases all of its best bakes in a new brick-and-mortar bakery, delighting its cultivated fan following. The culinary team is serious about their sourdough loaves here, sticking to a 20-hour natural fermentation process to yield more complex flavours and intricately hand-scoring each loaf. The Signature House Loaf is a modern classic: a white wholemeal country sourdough with stretchy pulls and a distinctive tangy flavour. Other favourites include the nutritious Marymount Seeds, featuring a mix of sesame, quinoa, and sunflower seeds onto the base of a house loaf as well as their Shepherd’s Pie and Forest Mushroom Pie.

Thanks to its rustic exterior and a frequent crowd of dogs and humans at the entrance, 174bingo is instantly recognisable. With an emphasis on quality ingredients, founder Jaslyn Chua bakes from the heart. The fan-favourite “Memory of Osterbrograde” is composed of flaky layers of pastry topped with vanilla cream and stuffed with raspberry jam—a meaningful tribute to a host that Chua stayed with while working in Copenhagen. Other gems include chicken pies, cardamom buns, baguettes, and the decadent Iranian pistachio tarts.

Husband-wife duo Thrina Low and Jacky Chan offer a slice of Europe at this well-loved artisanal bakery. Baking bread at Bakery Brera is an earnest affair, made with premium ingredients from France and Japan and proofed for 16 to 18 hours before baking. There is a good variety of sweet and savoury selections, including the popular nutty caramel cruffin, refreshing lemon curd cruffin, and the indulgent raspberry brioche bun.

Occupying the historic Red House, once home to the renowned Katong Bakery & Confectionery Company, Micro Bakery has begun a new era of bakes. This time, with sourdough. Known for its gorgeous, freshly baked sourdough, the stalwart has the baker’s stamp of approval. Fresh creations join its monthly line-up, including the black bean and corn sourdough, a rustic loaf bursting with black beans, corn, and seeds, delivering heartiness with a satisfying crunch. Outside the sourdough realm, the kumquat cheesecake makes the case for bright and tangy goodness for the sweet tooth.

Head chef Tomoharu Morita was part of the award-winning pastry team at Grand Hyatt Tokyo before moving from Japan to Singapore. Priscilla Toh began baking banana bread with her daughter back in 2021, which fortuitously blossomed into a booming home-based business. Thanks to that, she now makes and sells batches of banelé at their bright-yellow-clad store at Chancery Court. Banelé, a portmanteau of banana bread, brownies, and a canelé, is a one-of-a-kind creation that boasts a chocolatey centre within a caramelised crust, a delightful mix of moist and dense textures. There are a variety of banelé flavours on offer, including classic dark chocolate, almond, peanut butter, and raspberry.

You’ll find fluffy and flaky croissants at Quah Song & Co, where the team’s passion for pastry is clear. Each croissant comes out of the oven featuring its characteristic outer shell and a rich buttery aroma. The menu features the classic butter croissant and pain au chocolate, served with a flaky golden-brown crust that crackles with every bite. This Northern European-inspired bakery’s popularity started via word-of-mouth. Led by Hong Ui Chang, former head baker at Tartine Bakery in Seoul, Lean & Rich Bakery serves up high-quality artisanal bread and pastries. Baked across multiple batches in the morning, the sourdough and laminated pastries are particularly prolific. The latter, featuring various flavours including chocolate, vanilla, pistachio, seed cinnamon, and ham and cheese, draws pastry enthusiasts from all corners of Singapore.
