Now reimagined as the Mandala Masters: Discovery Series, the acclaimed culinary residency offers Asia’s rising talents a stage to present their innovative take on fine dining in Singapore

Over the years, Mandala Club has brought some of the world’s best restaurants to Singapore through its Mandala Masters culinary residencies, including Mauro Colagreco’s Mirazur (2021), Gaggan Anand’s Gaggan (2022), and Yoshihiro Narisawa’s eponymous restaurant (2023). After a short hiatus, the highly coveted pop-up has returned but with a twist, as it brings the spotlight on the emerging talents that redefine the fine-dining experience in the region.

Now known as the Mandala Masters: Discovery Series, this year’s edition launched last month with Nobuo, a one-Michelin-starred restaurant from Taipei which is known for its elegant fusion of Japanese cuisine and French finesse.

If you missed the sold-out, two-day affair, there’s good news: the second edition is on the horizon. On April 26 and 27, 80/20, the one-Michelin-starred restaurant from Bangkok, returns to take over the kitchen. True to its name, 80 per cent of the ingredients are locally sourced from across Thailand, while the remaining 20 per cent is fueled by bold culinary creativity. That said, chef Thav Phouthavong will present a tasting menu deeply rooted in Thai culture, but reimagined with a modern touch.

Closing this year’s Mandala Masters: Discovery series is Inita, a one-Michelin-starred restaurant from Taipei, which fuses Italian cuisine with Japanese precision and the best seasonal bounty from Taiwan. On May 24 and 25, chef Kunihiro Hagimoto will take over the kitchen to present a theatrical dining experience, featuring a meticulously crafted tasting menu that reflects his 20 years of culinary experience.
