Following the closure of his acclaimed establishment Clos Pasoh, Pacquelin makes a comeback with the opening of Les Ducs, a French ‘fun dining’ restaurant in Ann Siang Hill that reimagines French comfort food with Asian influences

French chef Louis Pacquelin makes his return to the F&B scene with the upcoming opening of his new restaurant, Les Ducs, on September 19. Similar to his previous restaurant Clos Pasoh, which shuttered last year, the menu here is a showcase of hearty brasserie dishes that inspired Pacquelin, but reinterpreted with Asian influences to cater to a more diverse palate. “We are not in France,” shares Pacquelin, and the ultimate goal is to “appeal to another generation of diners as well as non-French diners”.

Having called Singapore home for the last five years, Pacquelin has incorporated some local favourites such as bao and prata in his modern creations. Worth noting are the katsu de cochon Iberique and choux mariné, Ibérico pork secreto and katsu encased in a bao bun, and served with marinated red cabbage and tonkatsu sauce; and the croque prata, a fusion of croque monsieur and prata. The result is an assembly of cooked French ham, comté cheese and truffled béchamel sandwiched between toasted prata.

These serve as a delicious preview to the concise menu, offering a range of small bites and sharing platters that are perfect for family affairs or friendly gatherings. In the mood for steak? Then you’ll do well to order the 1kg T-bone Angus steak from Australia that is cooked to your preferred doneness and served with a Kampot pepper sauce. Make it an even bigger feast with the addition of the poulet à l’Américaine, French yellow chicken glazed in Dijon mustard, American mustard and Greek honey and roasted to get that crisp skin and succulent meat.

Introducing diners to his version of “French fun dining”, the 40-seat restaurant situated within a shophouse on Ann Siang Hill was designed with a New York loft in mind. Think high ceiling and exposed brick-and-cement walls contrasted with maximalist Arabian rugs, tasteful Asian lanterns, and contemporary furniture. The second floor has also been transformed as Madame Claude, a members-only social club where lively music, fine wines and food come together for a unique dining experience on the island.
