The latest dining concept at Forum The Shopping Mall puts this highly prized beef front and centre with deliciously grilled wagyu Japanese hamburgs and sandos

There’s a sense of excitement that envelops the dining room when diners watch their food being cooked over a live fire, even more so when you hear the crackling of the flames and smell the delicious beef aroma wafting through the air. That is the premise behind Gyu San Japanese Sando & Charcoal Bar, the exciting restaurant opened by renowned Japanese chef Tomoyuki Kiga which specialises in wagyu.

“With Gyu San, I hope to share more about Japanese cuisine beyond sashimi and sushi,” shared Kiga, who has trained at the world’s best restaurants including two-Michelin-starred Ristorante Aso in Daikanyama, Tokyo, and Melisse in Santa Monica, USA. Japan is home to some of the finest beef on earth that goes beyond your classic Kobe beef, he added, and these prime cuts are equally delicious. “I hope to continue bringing attention to the origins of the cow and highlight the unique textures and flavours.”

The restaurant specialises in its signature wagyu katsu sandos, as well as Japanese hamburg steaks which are prepared at the island charcoal bar. The latter is located at the space dedicated to grilling, and it forms the ‘stage’ where the brigade of highly skilled chefs cook the beef in front of your eyes, over the highly prized binchotan charcoal. Diners have the option to sit at the counter for front-row seats of the action.

A delicious introduction to what the restaurant has to offer is the A5 wagyu Japanese Hamburg Set, comprising two 90g wagyu patties prepared daily with freshly grounded wagyu. These are shaped like medallions by hand, and expertly grilled until they achieve that desired char. The chefs serve them on a personal mini grill (to keep them warm) alongside a comforting miso soup, Gyu San salad and steaming hot Japanese premium rice from Niigata, Japan. The special variety is famed for its soft texture and natural sweetness that complements the savoury hamburg steaks.

While the best way to savour the wagyu patty is on its own, just so you can fully appreciate its beefy flavours and delicious char, you’re also welcome to dip it in the eight condiments available—the flavours range from the traditional yuzu kosho to the local Singaporean sambal. If you can’t get enough of these wagyu offerings, make it an even bigger feast with the addition of signatures like the Gyu tongue, kabocha, shishito and baby corn. But for something more classic, you can’t go wrong with the signature wagyu katsu sandos, served in a bigger menu which also includes a selection of different cuts like tenderloin and ribeye, which are cooked over the teppan.

Gyu San Charcoal Bar is the latest addition to Kiga’s growing F&B empire on the island, which also includes the original Gyu San Japanese Butchery & Sando at Guoco Tower, a one-stop butchery shop that sells premium A5 Japanese wagyu and its signature wagyu katsu sando.
