Now at Pink Pearl, Olivier lends his savoir-faire to a restaurant that, as the story goes, once served as the private manor of the enigmatic Lady Pearl Collins. Channelling Gatsby-era glamour with lavish, considered details, the venue sits along one of Phu Quoc’s most breathtaking stretches of sand. The experience is as much about ambience as it is flavour—36 seats grace the opulent main hall, joined by five distinct private dining rooms, an extensive wine cellar and an intimate garden designed for romantic interludes.

Pink Pearl’s latest menu honours the unmistakable flavours of the Mediterranean coast, infusing the elegance of the Côte d’Azur with the idyllic serenity of Phu Quoc. With a refined hand, dishes are attuned to local palates, marrying seasonal Vietnamese ingredients with premium imports from France.

“The new culinary direction at Pink Pearl draws from my earliest memories of the French Riviera—a place that has always stirred endless inspiration,” Olivier shared. “I believe deeply in the philosophy of seasonal cuisine, in celebrating flavour through fresh ingredients, time-honoured recipes and techniques rooted in French tradition.
