New season, new plates

Louise, a Tatler Best Spotlight awardee, welcomes the new season with refreshed dining offerings. Executive chef Loïc Portalier and his team have curated dishes that honour French foundations while incorporating ingredients and flavours from Hong Kong and beyond.

A highlight on the à la carte menu is the horse mackerel, which sees the fresh catch, imported from Fukuoka, paired with pomelo dressing, shiso, yuzu kosho, makrut lime and green chilli. The Norwegian langoustine “dumpling” balances ocean umami with the herbaceous notes of leek fondue and sorrel sauce. New main courses range from a fresh take on Louise’s signature roasted three yellow chicken to the “mapo” ris de veau and foie gras, a mapo tofu-inspired plate that features sweetbread, grilled foie gras, bean curd espuma, Sichuan pepper and a sauce made from fermented bean and black bean pastes.

The updated brunch menu offers two approaches: a sharing format with starters, warm appetisers, a choice of mains, and a trio of desserts; or an à la carte experience that includes new dishes alongside signatures.

New items are available à la carte or as part of the five- or seven-course tasting menu, priced from HK$1,488 and HK$1,888 per person respectively, with optional wine pairings from HK$888. Brunch starts from HK$688 per person with alcoholic and non-alcoholic free-flow packages available.
