Walk down Duddell Street, head up to Plaisance, and the city begins to fade behind a palette of turquoise tones and sculptural details that quietly evoke the sea. The restaurant is the Hong Kong outpost of chef Mauro Colagreco, best known for award-winning Mirazur in Menton, and the cooking follows the same philosophy: nature first, technique second.
Led by executive chef Mitsuru Konishi, the menu leans decisively towards seafood. Fish and shellfish take the lead, accompanied by vegetables that feel chosen to echo the marine theme rather than compete with it. The kitchen works with global ingredients alongside local produce, applying classic French foundations while allowing a sense of spontaneity and creativity to shape the final dish. Sauces are a particular strength here—deep, layered and clearly the product of careful attention. What emerges is not simply another French restaurant in Central but a dining room with a clear point of view. The sea runs through the menu, the décor and the thinking behind the cooking.
Tatler Tip
Colagreco still visits the Hong Kong restaurant periodically, occasionally hosting special dinners or dropping into the kitchen during trips to the city. So keep an eye out, as diners sometimes find the Mirazur chef himself making an appearance during service.
