This transformation, led by executive chef Joshua Bedell and head chef Ayo Adeyemi, bridges heritage and innovation through a world-class menu that reinterprets regional flavours using contemporary techniques and premium produce. The result is an indelible dining experience that is layered, expressive and memorably impactful.

The miso Chilean seabass arrives as a study in texture—caramelised edges yield to buttery, ivory flakes that blissfully melt away on the tongue. The sweetness of white miso is intensified by the creeping heat of Szechuan green chili, creating a gentle crescendo of savoury warmth. 

For an encounter more reminiscent of home, the red snapper is pan-seared to a delicate silk, then bathed in a laksa broth that hums with coconut warmth and aromatic spice. Each mouthful is a complex interplay of oceanic sweetness, comfort and artfully restrained richness.

Anchoring the revamped dining room is a sculptural centrepiece onyx bar. Here, beverage manager Eduard Musteata helms an innovative cocktail programme with concoctions that help cement Cé La Vi as one of the top destinations in Asia.

His signature Ed’s Favourite Negroni is a herbaceous and gently citrusy rendition of the original. An alchemy of Botanist gin, Suze and Lillet, it is sharpened by white mint for a clean and revitalising finish. 

In the Silent Gold, the smoothness of tequila is combined with the bittersweet notes of Cointreau to form a marriage invigorated by the sweet, golden nectar of pineapple and a punch of tangy passion fruit. This vibrancy is then reined in by a hint of shiso at the top, resulting in a cocktail that is both exuberant and structured at the same time.
