Shangri-La The Fort, Manila’s authentic Peruvian restaurant delivers the sustainable seafood wave in arresting flavour and colour
Sustainable gastronomy marries two essentials we can’t live without: good food and green practices. In line with the United Nations Sustainable Gastronomy Day on June 18, 2023, Shangri-La The Fort, Manila rolls out a week-long programme to signal its enduring commitment to meaningful environmental and social causes—and the hotel kicks this off with a specially crafted menu at its Peruvian restaurant, Samba.

Peruvian food is all about celebrating bold flavours and spices, evinced in staple dishes like ceviche and lomo saltado among many others. This distinguishing flair is likewise the star of Samba’s exclusive offering this June 16 to 25, 2023.
Featuring authentic specialities made with locally sourced ingredients, the gastronomic affair at the 122-seater restaurant is headed by chef de cuisine Carlo Huerta Echegaray, who hails from Cusco in Peru, a UNESCO World Heritage Site. The diversity of his homeland’s cuisine has paved the way for Echegaray to serve as an ambassador for sustainable dining at Shangri-La The Fort, all while paying tribute to his heritage through every whiff and morsel of his culinary creations.
The special set menu in the coming week puts a spotlight on succulent sustainable seafood, prepared in three delicious ways. The first dish is boquerones de atun y langostinos, a stunning composition of line-caught yellowfin tuna, black tiger prawns, an acidic leche de tigre, sweet and spicy aji amarillo, spring onion and camote strings.

As this opens up the senses, it also makes way for the second delight on offer: an anticucho de mahi-mahi, which sees the tropical fish candied and skewered with aji panca or Peruvian red pepper, sesame, a rich rocoto sauce, potato truffle foam and chimichurri.


Next up is another flavour bomb in the form of a classic stir-fry called picante de mariscos. Made with tiger prawns, clams, ají mirasol, fava beans, bell pepper, tacu rice, creamy white beans, and zarza chalaca, it is sure to unlock layers of spice in every bite.


Samba finally completes this rich expedition of flavour with crema de chocolate, a delectable serving of Peruvian chocolate cream with raspberry sorbet and cacao nibs to end the decadent feast on a sweet note.

Samba’s exquisite seafood selection has been certified by the Aquaculture Stewardship Council and Marine Stewardship Council among others.
