With a cake-display overflowing with over 20 different varieties of tea-cakes, Plump by Tao Bakes Cakes has quickly become a haunt for regulars looking to enjoy a well-baked sweet treat alongside a cup of coffee. Pistachios shine in this Persian-inspired pistachio, lemon and rose cake with yogurt and figs, which was Tao’s first creation after deciding to pursue his baking career full-time. With a preference for dense, nut-rich cakes over their spongier counterparts, Tao’s pistachio-based cake is soaked with lemon and rose syrup before being piled with locally-grown figs atop a zesty yogurt topping.

Made with two kinds of nut, ground almonds and pistachios, Nourish by Kenny Hills Bakers' Lemon Pistachio Cake is soaked with a citrus lemon syrup before being garnished with caramelised pistachios. The base made from ground nuts renders the cake gluten-free, but the team at Nourish claims the texture is indistinguishable from its flour-based counterparts.
