Pan Pacific Singapore’s Plume launches its third menu, a five-chapter journey through the migratory instincts of birds and told across 15 cocktails and three non-alcoholic pours
Birds are fascinating creatures, celebrated not just for their beauty but for their extraordinary ability to travel thousands of miles across oceans and mountains, guided by instinct and an innate sense of direction in search of food or refuge from harsh weather.
It is this spirit of migration that has inspired Plume, the cocktail bar at Pan Pacific Singapore, in the creation of The Great Migration. Curated by head mixologist Akmal Haqim and bar manager Siew Han Jun, the third iteration of their cocktail menu is divided into five distinct chapters, each representing a different stage of the avian migratory journey and comprising 15 cocktails and three non-alcoholic beverages.
Opening the menu is “The Calling”, a chapter inspired by changing seasons and the spirit of discovery, told through unexpected flavour pairings that surprise and delight. Awake perfectly captures this sense of discovery with its East-meets-West blend of whisky and umeshu, while Instinct takes its name from the innate force that guides birds through their journeys. It pairs vodka with strawberry and pistachio for a combination that feels both intuitive and familiar.

Once the call is answered, “The Flight” reflects how birds navigate shifting winds, unfamiliar environments and the physical demands of travel. The cocktails in this chapter explore balance, technique, texture and flavour. Reserves exemplifies this, pairing whisky, sweet vermouth, Campari, cacao, artichoke and strawberry in a richly layered cocktail that reflects the endurance required for migration. For something more unexpected, Autopilot takes the form of a liquid macaron, bringing together gin, raspberry, peach, passion fruit and dark cherry in a playful interpretation of the classic confection.
After the journey comes “The Return”, marking the birds’ homecoming to their nesting grounds and the experiences gathered along the way. The cocktails capture the joy and familiarity of returning home, among them Refine, which pairs gin with iichiko Saiten, Aperol, apricot and gentian beneath a white chocolate and passion fruit foam. Restart, meanwhile, resembles a glass of beer but is a playful reinterpretation of Singapore’s most iconic cocktail, the Singapore Sling. The cocktail is a blend of gin, Lumina Triple Sec Liqueur, cherry brandy, D.O.M. Bénédictine, hibiscus grenadine and pineapple, and finished with a silky beer foam.

The fourth chapter, “Legacy”, looks at the traditions carried along migratory routes and passed down through generations, revisiting familiar classics with a contemporary perspective. Ritual, for instance, infuses chocolate cookie directly into bourbon before combining it with peated whisky and salted maple, resulting in a serve with a distinctly modern character.
Completing the journey is “The Migratory Cycle”, a trio of non-alcoholic beverages that captures the renewed sense of clarity that follows a long journey. Here, the focus shifts from movement to restoration, reflecting the respite birds find once they have completed their migration. Calm embodies this sense of renewal with coconut water, jasmine soda, honey and almond foam.
