Sommelier Mandy Chin has been in the industry for over 10 years

For International Women’s Day, Gallo Wine Bar partnered with Lillet to curate a high tea set that pairs perfectly with the apéritif wine. Sommelier Mandy Chin co-founded the wine bar six years ago.

With a cheery disposition, Chin speaks enthusiastically about her time in the industry, sharing that her time working at an Italian restaurant that served Italian wines sparked her interest in becoming a sommelier.

The seasoned wine expert shares her drink of choice and some of her most memorable pours to date.

Wine of the moment

I’d pair different wines with different moments. For example, German Kabinett Riesling with dim sum, Spanish Rioja Rose with century eggs, Prosecco with barbecue, Leyda Valley Pinot Noir with Chinese New Year dinner, and Piedmont Moscato d’Asti with mooncakes.

What's one bottle you're saving for a really big moment?

Domaine de la Romanée Conti.

A special something

They are all a special something to me, whether because of the aroma, the history, the moment I had it, or the people I shared it with!

A selection. Some for day-to-day, some for special occasions, some for collection, and some to keep for parallel tasting with newer vintages.

Last glass you’ve had

Lillet Blanc, paired with Sichuan mapo tofu!

If not wine then what?

Brandy.
