Tilde Bakery’s take on the classic French apple pie is another winning dessert, made with a shortbread crust and brown sugar cinnamon crumble. But for something much more indulgent, take home their turtle pie: a chocolate and caramel-filled creation with walnuts in a cacao version of their shortbread crust.

3. Hey Pie People

If there’s one reason to get up before 10 am on a Saturday, it’s Hey Pie People. Every weekend, Raeanne Young-Sagan opens up the order forms for the following week’s dedicated pie flavour - mangosteen coconut, mango peach, and double chocolate pudding pie are just three of the decadent desserts she’s whipped up in the past. Sadly, her pie mastery is a terribly kept secret, and you’ll need quick fingers to secure a pie when the form is live. Speaking from personal experience, some have even sold out in thirty seconds.

Tatler Tip: as stressful as securing Reanne’s pies may be, all hope is not lost! She also offers an early access service that allows you to order before the official form launch, with added cost. Alternatively, many pie people have been known to quarter their pies and send them as care packages to those who missed out.

The famed bakery brand has a number of pies to choose from, ranging from familiar classics like apple and banana cream to inspired local twists like young coconut with sweet creme anglaise and mango with passionfruit.

Tatler Tip: conscious about your sugar intake? Wildflour also offers sugar-free alternatives of their best-selling pies, as well as miniature versions.

In collaboration with BWB Kitchen, the cleverly named Apo Baking Society has introduced a  limited menu of pies, available once a week with flavours set to change every month. So far, the collaboration has bred a tangy lemon chiffon pie, a luscious chocolate silk pie, and a salted honey oat pie with great textural depth.

Tatler Tip: the ordering process is centralised through their Instagram stories, so make sure to follow the brands and stay up-to-date on when orders are live and what flavours they’ve got on offer.

7. Nono’s

From must-try desserts at Classic Confections to comfort food at Nono’s, chef Baba Ibazeta-Benedicto has more than proven she knows her way around the kitchen. The banana crema pie, which was first introduced at Classic Confections, has been a long-loved dessert and continues to be a favourite at Nono’s restaurants. The secret to its success? The one-of-a-kind crust, slightly chewy with a great bite thanks to the generous cashews mixed throughout.

As a celebrated empanaderia, it only makes sense that Casa Luisa puts their flaky pastry expertise to use in a second, equally delicious format. First introduced as a sweet empanada, their sampaguita and cheese pie marries mango-sampaguita jam with beautifully ripe mangoes and cheese mousse, then tops it off with queso de bola and kesong puti, all tucked within their beloved buttery flaky pastry. Here’s hoping they delve into dessert pies even more.

Tatler Tip: looking for more sweet and flaky goodness? You cannot go wrong with their macapuno dayap napoleones, filled with a luxurious dayap coconut custard and sweetened authentic macapauno, elevated further with Don Papa rum syrup served on the side.

Part-pie blog and part-pie shop, the sweet and savoury pies from Sea Xalt are among the most limited and small-batch treats on the list. A quick scroll through their Instagram page reveals a world of pies so picturesque, it would be a shame to slice into them. Of course, with creations like passionfruit curd and fig frangipane, it would be an even greater shame not to dig in.

Tatler Trivia: many of their pies are inspired by the work of other beloved chefs and brands, both overseas and right here in the Philippines. Spot the lemon pie with a raspberry bottom inspired by dessert queen Claire Saffitz and the fig and prosciutto galette inspired by Casa Luisa.

10. The Manila Baker

Caramel, honey, and brown butter - how could one possibly resist? The Honey Bee Salted Pie from The Manila Baker blends these three tempting elements into one custard filling, and tops it with flaky sea salt to cut through the richness and add another layer of flavour. They've even got a variation topped with macadamia, perfect for those who like added texture in their pies.

11. Lemonlime Manila

There are times when a leaner menu suggests that you’re in for a special delight, and Lemonlime Manila is a prime example. Their signature key lime pie is just one of two items on offer (the other being a summery lemon cheesecake), so you can rest assured they’ve put in the work to perfect their star dessert. Superbly tangy, silky smooth, and undeniably beautiful, these best-sellers effortlessly tantalise the eyes and taste buds.

12. Mrs. Makes

Some trends have stood the test of time, and crack pie is certainly one of them. Traditionally made with an oatmeal cookie crust and a sinful gooey custard, it’s impossible to stop at just one bite. Mrs. Makes takes the creation to the next level with six flavours, including the original, banoffee, and fluffernutter.

Tatler Tip: go all out and get a miniature size of each with the six-pack sampler or opt to build your own and choose your crust, custard filling, and two toppings to boot.

13. Bakerton

Pinoy pride is well and truly alive with the pies from Bakerton. Their stunning turon langka pie (TLP) blends banana creme, mashed langka, and saba bananas on their flaky golden crust. True to form, the TLP is also available sans langka, filled with extra saba instead. Not a banana fan? Try out their maja blanca pie instead, an innovative ode to the Filipino coconut dish - topped with corn, as one would expect.

14. Purple Oven

When one thinks of Purple Oven, your mind immediately goes to rich cakes, zingy lemon bars, or perhaps fragrant banana bread. But did you know that they also offer two timeless pies? Filled to the brim with chunks of syrupy fruit, the apple crumb pie is as generous as it is delicious. However, their other pie flavour is my personal favourite - namely, the banoffee pie. Playfully decorated with caramel and ganache, the banoffee pie demonstrates that banana and toffee are a match made in heaven, especially when paired with toasty graham crackers.
