Hopping across the harbour for the first time, the Italian chef launches a truffle-focused fine dining restaurant and a wine bar featuring the best of Barolo
Hong Kong's hearty love affair with Italian cuisine continues with two new venues created by Italian chef Umberto Bombana. Known fondly as the king of white truffles and the man behind three-Michelin-starred 8 ½ Otto E Mezzo in Central, Bombana crosses the harbour to open a Kowloon restaurant and bar for the first time, both of which can be found in K11 Musea and are connected by a private staircase. The restaurant, Tuber, is a fine dining destination that focuses on truffles and all its varieties while Cannubi, an Italian kitchen and bar, showcases the finest wine from Piedmont paired with simple Italian fare.
Resident chef Roland Schuller from Octavium will relocate to Tuber, working with long-time Bombana protégé and executive chef Keith Yam Ka-lok—whom you may recognise more recently from Crowne Plaza's Giacomo in Causeway Bay—and Italian pastry chef Tommaso Gaudino. The elegant space is decked out in contemporary Art Deco with marble accents across the ceiling and tanned leather chairs designed to match with the white and black truffle focused dishes.
Inside, there is a 16-seat private dining room and a custom moisture and temperature-controlled cabinet displaying truffles next to the kitchen. The degustation menu will also feature some crowd-pleasers including Roland’s signature Carabinero (red prawn) linguine. Guests of Tuber can take a private stairwell to Cannubi to continue the evening, passing through a corridor decorated with art by Italian artist Sandro Chia.
