
Tuber
Located in K11 Musea, Tuber is one of Umberto Bombana's first venues in Kowloon. The Italian fine dining ristorante will focus on Bombana's aromatic ingredient of choice, truffles, in all its varieties and is helmed by resident chef Roland Schuller and executive chef Keith Yam Ka-lok. The restaurant is connected by a private stairwell to Cannubi, the group's Italian wine bar.
Not for naught is Michelin-starred chef Umberto Bombana called the “King of White Truffles”. At Tuber, his first restaurant in Kowloon, Bombana leans into his moniker, with seasonal Alba white truffle offered as a supplement to every dish on the six-course degustation menu. Resident chef Roland Schuller, together with executive chef Keith Yam Ka-Lok, focus on prized ingredients such as shima-aji sashimi, Brittany blue lobster, and carabineros red prawn. For a sweet ending, try Italian pastry chef Tommaso Gaudino’s hazelnut mille-feuille. Guests enter by passing through Cannubi, a wine bar and bistro that serves a more casual version of Tuber’s menu, with a wealth of by-the-glass options.
