Chef-owner Kyle Connaughton will helm the kitchen and offer a seven-course tasting menu at Basque Kitchen by Aitor this July
Singapore’s food scene is vast and diverse, even more so now that international chefs are bringing their culinary offerings to the island. The latest one is three-Michelin-starred establishment, SingleThread, whose chef-owner Kyle Connaughton will host a month-long pop-up at Basque Kitchen by Aitor this July.

Typically booked out months in advance in its California outpost, SingleThread is a farm-driven restaurant that offers seasonally inspired cuisine. In Singapore, Connaughton aims to showcase this with an exceptional seven-course menu inspired by his and his wife’s, Katina, time living in Hokkaido, Japan.
“Our time in Hokkaido was some of the most formative in our lives. Katina and I would sit for hours working on recipes, sharing sake and talking. It was a way of cooking and a way of life that changed us forever… This residency is a creative opportunity to compose a menu inspired by Japan, and support and showcase incredible products from South East Asia,” shares the chef.

Above First course: Mid Summer in Singapore and Sonoma
Expect to savour some of Connaughton’s signature dishes such as donabe, served with wonderfully smoked black cod and drizzled with a fragrant shio koji (koji salt) vinaigrette, and Mid Summer in Singapore and Sonoma. The latter is the restaurant’s signature first course that features an elegant centrepiece covered in flowers and a selection of amuse-bouche, including Japanese sweet shrimp, creamy uni panna cotta and rich cured duck liver parfait.
The extensive wine list, curated by SingleThread wine director Rusty Rustello and Park90, showcases handpicked labels that pair well with Connaughton’s innovative dishes.
