The restaurant will be the first of three upcoming concepts launching at the newly renovated 8 Lyndhurst Terrace in 2022

The launch of Testina in February 2022 will be something to look forward to, as it’s a collaboration between Trippa Milano and local restaurant group ZS Hospitality. Given that quarantine-free international travel is still out of the question for Hongkongers, it seems that dining out will be one of the few ways for us to see the world in 2022. Joining the plethora of new restaurant openings in 2022, Testina will soft open on 9 February on the third floor of the newly renovated 8 Lyndhurst Terrace, which previously housed other ZS projects such as Hansik Goo (now located in The Wellington) and Lee Lo Mei (now closed).

It’s a bit of a departure for the group, which has primarily focused on contemporary Asian cuisine: apart from Hansik Goo, their portfolio of restaurants include venues such as modern Singaporean fine diner Whey, the two-starred Chinese restaurant Ying Jee Club, Chinese vegetarian fast-casual restaurant Miss Lee and Asian food hall J.A.M.

Trippa Milano was established in Milan in 2015 by culinary creatives Diego Rossi (head chef) and his partner Pietro Caroli; it’s known for its renegade approach to trattoria cuisine, a blend of modern reimagining of comfort classics. Rossi has made several trips to Hong Kong in the past, too, collaborating with Sake Central in the summer of 2019 on a pop-up. The tripe referenced in Trippa Milano’s name is, of course, a signature and will show up in the form of trippa fritta (fried tripe) at Testina.

The kitchen will be headed by chef Marco Xodo, previously of 8½ Otto e Mezzo in Shanghai, with proposed dishes that skitter across Italy—from whipped cod fish, hinting at a Venetian classic, to homemade pappardelle with lamb referencing the beloved wild ragu pasta of Tuscany. Palladiana flooring, olive green furnishings and mustard-yellow walls aim to recreate the aesthetic of a Milanese trattoria in the ’70s.
