The famed chef’s first venture in Asia will take over mezza9’s space at Grand Hyatt Singapore

Gourmands will be glad to know that acclaimed Dutch chef Sergio Herman will be opening his latest dining concept in Singapore. Slated to open in late 2023, the restaurant will be launched in collaboration with Grand Hyatt Singapore and will take over the prime spot left by the now-shuttered Mezza9.

Herman has become a household name in the Netherlands and Belgium over the years. On top of launching his own product lines in tableware and champagne, Herman is also famed for running a slate of successful restaurants, including two-Michelin-starred modern restaurant Pure C; one-Michelin-starred Italian restaurant Le Pristine; and the now-defunct contemporary restaurant Oud Sluis. The latter is his family’s humble mussel restaurant, which Herman transformed into a culinary powerhouse, consistently earning three Michelin stars since 2005.

The news has got gourmands in Singapore excited, as it will mark Herman’s first foray into Asia after an illustrious career in Europe. While the restaurant’s concept has yet to be finalised, Herman hopes that it will be established as a ‘new classic’ in Singapore’s dining scene.
