The respective chef-founders of Andō and Mono are solidifying their friendship with a restaurant that pays homage to their roots

The friendship between chefs Agustin Balbi and Ricardo Chaneton is well-known among their peers, with the pair having collaborated professionally over the years—not least including the October edition of Tatler Dining Kitchen, where they paid tribute to their Latin American roots by sampling from the continent's most popular street snacks, as well as serving a procession of gourmet tacos.

Both chefs have made a name for themselves reinterpreting and innovating the food culture of Latin America in new and exciting directions. With his championing of Latin American culinary traditions as refracted through the lens of French technique, Chaneton has established Mono as a de facto embassy for the exploration of the continent's varied and highly unique produce, as well as its rich culture of gastronomy. At Andō, Balbi liberally blends Japanese ingredients and influences with a highly personal backstory, with each dish paying homage to his family and upbringing in Argentina. Together, they have engendered an awareness of Latin American cuisine in Hong Kong and fostered a greater connection with their homelands—an approach that has won them multiple Tatler Dining Awards in the process.

Now, they've taken the next big leap in opening a restaurant together. Debuting in mid-December, Rosita is a new Latin American restaurant on Wan Chai's Ship Street that will offer a tasting menu that combines elements of Balbi and Chaneton's respective upbringings in their native Argentina and Venezuela, while simultaneously weaving in Balbi's penchant for Japanese gastronomy, as well as Chaneton's training at the highest echelons of French cooking.

In charge of the kitchen is head chef Marco A. Livoti, who previously cut his teeth at Sake Central and Octavium, as well as running dessert brand Holy Cannoli. Livoti is also a Rising Star chef at this weekend's Off Menu

Meaning 'little flower' in Spanish, Rosita is named after Hong Kong's bauhinia flower, paying tribute to the city in which Balbi and Chaneton met. As such, the interior is styled like an extension of their homes, with an open-plan kitchen that encourages interaction between chef and diner. 

Rosita will soft open for dinner daily starting this mid-December, serving a single six-course tasting menu priced at HK$988 per person. A lunch menu will follow at a later date.
