Learn the story behind the sustainably sourced menu that guests enjoyed alongside bespoke Hennessy X.O cocktails at the 2021 Tatler Ball

Hong Kong's biggest and brightest stars gathered last night at M+ museum for the 2021 Tatler Ball. Hosted for the first time outside of a traditional ballroom, and sponsored by HSBC Private Banking, Chopard and Hennessy, the event saw over 200 guests come together to celebrate Hong Kong's creative future, and raise a glass to the inaugural Asia's Most Influential honourees, who were unveiled by Tatler earlier this month. 

Attendees at this year's Tatler Ball enjoyed a sustainably and responsibly sourced menu and hand-crafted Hennessy X.O cocktail, developed in collaboration with a number of this year's Asia's Most Influential honorees. Designed by Asia's Most Influential honouree, The Arcane Collective's Shane Osborn and Michael Smith and produced by the Grand Hyatt Hong Kong's Soren Lascelles, this year's meat-free menu was a true display of collaboration and responsible sourcing. 

The menu celebrates Hong Kong produce, culture and flavours, with a number of locally sourced fruits and vegetables appearing in each dish. Guests dined on freshly picked Hong Kong tomatoes, strawberries and corn alongside sustainably fished Ora King salmon, and toasted with Hennessy Paradis.

Hot on the heels of being named on the inaugural Asia's Most Influential and The World's 50 Best Bars lists, Jay Khan and the COA team brought their creativity to the Tatler Ball with a specially designed cocktail served at the Hennessy Bar. 

Designed to reflect Tatler's core values and celebrate Hong Kong's long-time connection to Hennessy X.O––a true representation of luxury & power––Ethereal was designed by Khan and the COA team, especially for the Tatler Ball. Taking each value of "the best of power, influence and style" and reflecting it through unique flavours, Ethereal––a word which is defined to mean "extremely delicate and light in a way that seems too perfect for this world"––combines the power and heritage of Hennessy X.O with the culinary influence of lime and the enduring style of sandalwood to create a drink that is as delicate as it is stylish.
