Chef-owner of London's three Michelin-starred Core reveals why she loves working with the Swiss luxury watchmaker

When it comes to developing recipes, preserving craftsmanship, and keeping a meticulous kitchen at her restaurants in London and Sydney, Chef Clare Smyth is at the top of the game. As a friend of Hublot, Smyth has been able to keep up with the pressure of time, ensuring every dish that comes out of her kitchen and into the dining room is presented in a timely, pristine manner. 

"Time is everything," proclaims Smyth via a Zoom interview made possible by The Hour Glass. "Everything is done to the seconds and minutes. In the kitchen, it's like a Formula One pit lane—it comes down to the seconds."

Hublot is known for its bold and beautiful watches, which are what drew Smyth to the brand. A fan even prior to their partnership, Smyth admires Hublot's ability to create bold pieces, while staying innovative and audacious.

The partnership began in 2017, the same year Smyth opened Core by Clare Smyth in London. Since then, Smyth has traveled the globe hosting masterclasses, attending events, and connecting with other Hublot friends.

"(Hublot) is always pushing new ideas, pushing the envelope, and pushing boundaries," states Smyth. "And that's what I do with dining too."

Smyth has also curated menus that are all about precision and time, drawing similarities between the the craft of developing a Michelin-worthy menu and fine watchmaking.

Hublot has become a huge part of Smyth's life—even the clocks in the Core by Clare Smyth and Oncore by Clare Smyth kitchens are made by Hublot. She has also come a long way from her first luxury watch, a Hublot Classic Fusion King Gold Blue, and is now the proud owner of an impressive collection of different brands. Hublot, however, remains closest to her heart.

Having visited the Hublot manufacture in Geneva recently, Smyth has gained a better appreciation for the art of watchmaking. "It's unbelievable how this little thing keeps perfect time. A watch movement is beautiful."

"When you love watches, you simply love watches. And you'll eventually find and appreciate the style and the maker that suit you." For Smyth, that maker is, without a doubt, Hublot.
