New menus and celebrations make this week an exciting one in the dining scene

There’s cause for celebration this week as new chefs take over classic establishments and new menus are released. What we can be certain about is that this means a bevy of great eats to indulge in this week. 

At 15 Stamford by Alvin Leung, you’ll find a new resident chef at its helm, Elden Lee, with a brand new menu to showcase his chops. Elsewhere, the Astor Grill’s pop-up at Brasserie Les Saveurs will stun with premium cuts of beef, including Aberdeen pure black and Australian Tajima Wagyu skirt steak. And if you’re still feeling peckish for some no-nonsense beef, Boeuf’s new four-course Wagyu menu will satiate your cravings and more.

If you’re looking to be transported to the Swiss alps, Coucou is the place to go with its signature fondue. 15 Stamford at Alvin Leung welcomes a new resident chef Elden Lee, who has been the establishment’s sous chef ever since it opened. He brings with him a new menu blending traditional flavours with contemporary techniques, giving new breath to chef Leung’s “X-treme” philosophy of bold reinterpretation.

Take the new tuna tartare, which is updated with a laksa emulsion and enriched with a lemongrass-infused coconut cream, adding a fascinating spice to a fairly simple dish and finished with smoked nori rice crackers for crunch. The char-grilled Fremantle octopus is another offering that fuses Asian flavours with European technique by blending salted egg yolk with shallots, Sauvignon Blanc, and white garlic. The result is a smooth purée that’s perfect for the tender octopus, enhanced by the addition of brined anchovies, smoked tomato, and parsley.

2. Boeuf

No trip to Boeuf is complete without its exquisite steaks, and in this set menu you’ll be treated to an Australian Stockyard F1 Wagyu picanha, a sirloin cap with a marbling score of six and presented with torched garlic and rosemary for a beautiful aroma. 4. Little Farms

Local specialty grocer Little Farms has updated its dinner menus for its three bistro and café concepts—Little Farms Table at Tanglin Mall, Little Farms Café at Valley Point, and its newest restaurant, Little Farms Bar + Grill at Myvillage. Each menu is crafted in line with the sustainability and high quality Little Farms is known for, making sure that each offering is as wholesome as it gets.

Dry-aged O'Connor cuts of Australian free-range beef are up for grabs at Little Farms Café, including the OP rib and the T-bone, impossibly tender and juicy that’s best served with a selection of sauces at the side including red wine jus, umami butter (made with kombu, wakame, and sesame), and a wild mushroom gravy. Fresh, handmade pasta is also a highlight in dishes such as the crispy pork jowl tagliatelle available at Little Farms Table, as is the Angeleno meatball pasta in a simple tomato basil sauce at Little Farms Bar + Grill.

5. The Astor Grill

St Regis Singapore has launched its latest pop-up, The Astor Grill, at Brasserie Les Saveurs. Available from now until August 31, the pop-up showcases quality cuts from America and Australia—think US Harris Ranch Angus Prime, Aberdeen pure black and Australian Tajima Wagyu skirt steak. The gorgeous cuts of meat are prepared on a custom-built parilla grill, resulting in smoky and aromatic flavours. Each cut is also accompanied by a selection of speciality salts, house mustard and sauces. Not a fan of beef? Other proteins are available too, such as the juicy tiger prawns, grilled whole turbot and traditional beef tartare.
