15 Stamford at Alvin Leung welcomes a new resident chef Elden Lee, who has been the establishment’s sous chef ever since it opened. He brings with him a new menu blending traditional flavours with contemporary techniques, giving new breath to chef Leung’s “X-treme” philosophy of bold reinterpretation.
Take the new tuna tartare, which is updated with a laksa emulsion and enriched with a lemongrass-infused coconut cream, adding a fascinating spice to a fairly simple dish and finished with smoked nori rice crackers for crunch. The char-grilled Fremantle octopus is another offering that fuses Asian flavours with European technique by blending salted egg yolk with shallots, Sauvignon Blanc, and white garlic. The result is a smooth purée that’s perfect for the tender octopus, enhanced by the addition of brined anchovies, smoked tomato, and parsley.
