Humble tacos, exquisite gastronomy and explosive fusion are on this week’s roster of dining options

If you’re the type of foodie with adventurous palates, this week is for you. Start with an exclusive nine-course dinner prepared by legendary chef André Chiang and Wilson Fam at 67 Pall Mall, where Sichuan cuisine is given new life in their masterful hands. Go on to feast at Firangi Superstar, which is matching its Indian cuisine with Esquina’s Catalan flair in a one-night only collaboration dinner. And as we welcome September, make sure to head to Canchita, which is offering exclusive tacos with the help of four Singaporean chefs at the top of their game for the whole month.

Culinary luminaries light up 67 Pall Mall from August 27 to 29, where renowned chef André Chiang and Sichuan Moon executive chef Wilson Fam will be presenting a nine-course menu redefining traditional Sichuan recipes. Look out for signature seasonal creations on the menu like the longevity dan dan noodles, or the spicy mala lobster zhong dumpling. Pair it with rare, premium teas with robust flavours to match the fiery profiles of Sichuan cuisine, or go for a wine pairing curated by 67 Pall Mall’s head sommelier Roberto Duran.

2. Firangi Superstar

Find the affinities between Indian and Catalan flavours at Firangi Superstar, where head chef Raj Kumar will be joining hands with Esquina chef-owner Carlos Montobbio on August 30. With memories, heritage and experiences from each chef distilled into one explosive five-course menu, feast on delights like the smoked Sanchoku F1 Wagyu and the Iberico pork presa vindaloo that will take your taste buds on a culinary journey from Bombay to Barcelona.

Challenge your taste buds with Appetite’s new à la carte menu, another exciting iteration of chef-owner Ivan Brehm’s explorations under his global “Crossroads Thinking” culinary philosophy. Consisting of snacks, tapas and small plates, choose from a selection of “Kitchen Specials” which include delights like Port Douglas fresh mussels in a white wine saffron broth, and a tuna crudo in an agua chilli and avocado relish. These plates will change often as the kitchen explores and experiments, but there are some evergreen menu items in the “Appetite Classics” section, including its signature Hokkaido corn custard with Japanese uni.

4. Canchita

Think you know everything about tacos? Think again at Canchita, where chef-owners Daniel and Tamara Chavez have invited four esteemed (and yet unnamed) chefs in Singapore to redefine this iconic Mexican street food at the “El Taco Secreto”. Running for the month of September in time for Mexican National Day on September 16, find exciting iterations of the humble taco by chefs, of which we are only given clues to their identities—one a master of the grill, another revolutionising Singaporean cuisine, one an expert of Japanese gastronomy, and the final one boasting two Michelin stars.

From now until September 14, get to feast on mouth-watering Peranakan dishes at The Fullerton Hotel Singapore. Curated by local culinary master chef Philip Chia, the latest buffet spread puts the spotlight on vibrant Peranakan flavours. Start with appetisers such as the kueh pie tee and bakwan kepiting (crabmeat ball soup) before digging into classic dishes like the succulent babi pongtay (braised pork belly in fermented soybean sauce), tender beef rendang and ayam buah keluak (chicken and black nuts glazed in an earthy tamarind gravy). Don’t forget to visit the live station and savour rich Nonya Laksa topped with prawn, fish cake quail egg and beansprouts. Save room for dessert as you won’t want to miss out on trying the colourful assortment of Nonya kueh.
