The former executive chef of the three-Michelin-starred modern European restaurant is set to open his own restaurant in Dubai later this year
After helming three-Michelin-starred modern European restaurant Zén for five years, Tristin Farmer has left his role as its executive chef to open his own restaurant in Dubai later this year. The dining establishment, which is in partnership with hospitality company Culinary Arts Group where he now serves as chef-patron and culinary director, will be located in the Gulf Tiger—the jewel of the Middle East.
“It’s been my lifelong ambition to open my own restaurant and what better place to do it than in Dubai,” shared Farmer, who let on that he is excited to return to Dubai. It is, indeed, a homecoming for Farmer who was previously the chef-patron of chef-restaurateur Jason Atherton’s The Social Company in Dubai. During his time there, he also earned the prestigious title of Middle East Chef of the Year for two consecutive years in 2016 and 2017.

Farmer added the city has changed so much since the last time he was there.
“I believe it’s a good place to be based in to push the boundaries of the culinary arts,” he said.
While the name of the brasserie is yet to be announced, Farmer elaborated that his menu will take inspiration from his diverse culinary background, global flavours and love for seasonal ingredients.
More than helming the brasserie as its chef-patron, Farmer will also spearhead the expansion of Culinary Arts Group with the opening of Revolver’s first overseas outlet in Dubai this year. “I would like to further push the boundaries with Revolver, introducing fresh techniques and approaches to the team and keeping the restaurant’s strong identity that diners have come to appreciate,” added Farmer, who will introduce fresh culinary techniques to elevate the modern Indian restaurant’s flame-kissed offerings.
