Possibly one of Singapore’s most exquisite fine dining experiences, a meal at Ocean Restaurant is for those who wish to impress or be impressed. The freshness of the sea is always within reach with a luxurious seafood-focused menu. Book a table surrounded by the deep blue waters, where marine creatures glide effortlessly through the restaurant’s aquarium, and tuck into acclaimed chef Olivier Bellin’s sustainably sourced menu. For the uninitiated, Bellin also helms the two-Michelin-starred L’Auberge des Glazicks in Brittany, France. Favourites include the shredded king crab sandwich between a toasted baguette and thinly sliced avocado that commands a symphony of flavours and textures. Madrileño chef Aitor Jeronimo Orive marks his return to fine dining with the anticipated opening of modern Basque restaurant Sugarra at Resorts World Sentosa. And it has already made the Michelin Guide 2025 Singapore in under a year, making it a one to watch. Celebrating heritage food from the Basque Country’s rich culinary traditions, Orive taps into his upbringing and his two grandmothers for an inspired menu. The suquet, a hearty seafood stew featuring charcoal-grilled Alfonsino fish and mussels, pays homage to the autonomous community’s high-quality seafood, while the txuleta rib steak, a special cut from the primal rib, is charcoal-grilled and paired with piquillo gel and smoked garlic mousseline. Diners can also look forward to the tableside trolley chock-full of artisanal cheese and fortified wine, as well as the extensive wine list with more than 750 labels.

The Michelin-recommended Peking duck specialist is about to receive a warm welcome at its first Singapore outlet at Resorts World Sentosa’s Weave. Hailing from Beijing, it promises duck mastery sold at accessible prices since it first opened in 2008. Each Peking duck undergoes a meticulous preparation ritual, where it is first air-dried for 12 hours, then roasted in traditional ovens until the skin achieves that coveted lacquered sheen. Besides the crowning jewel, authentic Northern Chinese cuisine will also make up the bulk of the extensive menu; think hand-pulled noodles, delicate dumplings, and a showcase of seasonal vegetables.
