1. Angel Horse Teochew Fish Soup

Warm your body up with a comforting bowl at Angel Horse Teochew Fish Soup. Rosemead’s chef de cuisine Ammie Khoo’s go to spot for fish soup, she shares: “This stall at Albert Food Centre serves up the perfect bowl of comfort, even more so when it’s raining. Despite its simplicity, it is a well-balanced soup in terms of flavour and texture. You get a refreshing taste and tenderness from the batang (Spanish mackerel) that they use, some sweetness from the tomato, bitterness from the bitter gourd, umami from the seaweed and if you’re lucky, some popping texture from the fish roe.”

2. Hock Prawn Mee

Satisfy the stomach and soul with a bowl of prawn noodles. Cherry Garden’s head chef Soong Kin Wah recommends Hock Prawn Mee for its sweet and flavourful broth filled with spring noodles and juicy prawns. He says: “I was introduced to this stall by my colleagues three years ago and have been patronising it ever since. I enjoy the soup version—I love the umami-rich broth that’s filled with sweetness of the prawns. You also have the option of adding pig intestines, which is rarely available at other places.”

3. L32 Handmade Noodles

While ban mian can be found in most hawker centres across the island, Spago by Wolfgang Puck’s executive chef Greg Bess enjoys visiting L32 Handmade Noodles. He continues: “I chanced upon L32 handmade noodles when I was walking around my neighbourhood, and I have been a fan ever since. This stall has become my go-to place for a bowl of piping hot comfort food on my off days for years. The noodles are delightfully chewy, and the broth is well-balanced. I like to let the egg poach slowly in the flavourful hot broth until it approaches a medium consistency before I spike it with a lot of chilli padi macerated in soy sauce—the spicier the better!”

4. 328 Katong Laksa

Up for a meal with a spicy kick? Opt for a bowl of laksa instead. Restaurant Euphoria’s chef-owner Jason Tan’s must visit spot is 328 Katong Laksa, for its rich and aromatic bowls. He shares: “I especially like their version of laksa because of the excellent soup—it provides a good balance for the spiciness and richness of the coconut milk. I also enjoy the fact that I can eat with only a spoon!”
