Acclaimed chef couple Daniel and Tamara Chavez inject real Mexican flair into Tomatillo, Singapore’s newest waterfront restaurant at Esplanade
Talk about starting 2025 with a bang; no one has got their hands fuller than Daniel and Tamara Chavez right now. Fresh off with their return to the CBD with casual Spanish tapas and wine bar Vino Tinto, the dynamic duo of Canchita Peruvian Cuisine and Tinto Spanish restaurant follows up the one-two with another sparkling food-led venture: Tomatillo. Located in Esplanade, Singapore’s newest waterfront Mexican restaurant isn’t your typical taqueria because the Chavez’s are not playing about when it comes to authenticity.
Naturally, tacos take centre stage at Tomatillo, featuring ingredients sourced from the furthest corners of Mexico. The chef couple recommends the Taco de Jaiba, sporting a whole crispy soft shell crab with refreshing tomato salsa, sweet mangoes, and fiery habanero mayo; and the Taco al Pastor, a Mexican adobo marinated pork layered with the vibrance of salsa de arbol chilli and pineapple salad. Keeping it inclusive, the kitchen also came up with a vegetarian-friendly taco, stuffed with grilled asparagus, baby corn, pico de gallo, and an earthy squeeze of mushroom mayo.

For groups, sharing plates are designed to capture the conviviality of Mexican food. Think liberally loaded nachos and lip-smacking tapas. The former comes in two sizes: large and extra large; with flavourful iterations of chilli con carne, guacamole, chilangos, and salsa roja (spicy and smoky red sauce). The latter showcases a light and refreshing lineup of ceviches and aguachiles alongside heavy hitters such as mariachi chicken wings, fried chipotle calamari, and octopus tostadas.

Wash the grub down with a slew of Latino-inspired cocktails and Mexican beers plus sprawling views of the city. Four distinct atmospheres make up Tomatillo’s space: head indoors for a lush tropical greenery juxtaposed against fresh pops of colour, warm parquet floors, and beautiful wood and rattan furniture; or lounge away at the breezy outdoor terraces and alfresco dining areas. All’s left to do is to let down your hair, drop the needle on the retro vinyl, and jive to the salsa beat.
