Fresh off with their return to the CBD with casual Spanish tapas and wine bar Vino Tinto, the dynamic duo of Canchita Peruvian Cuisine and Tinto Spanish restaurant follows up the one-two with another sparkling food-led venture: Tomatillo. Located in Esplanade, Singapore’s newest waterfront Mexican restaurant isn’t your typical taqueria because the Chavez’s are not playing about when it comes to authenticity.

Naturally, tacos take centre stage at Tomatillo, featuring ingredients sourced from the furthest corners of Mexico. The chef couple recommends the Taco de Jaiba, sporting a whole crispy soft shell crab with refreshing tomato salsa, sweet mangoes, and fiery habanero mayo; and the Taco al Pastor, a Mexican adobo marinated pork layered with the vibrance of salsa de arbol chilli and pineapple salad. Keeping it inclusive, the kitchen also came up with a vegetarian-friendly taco, stuffed with grilled asparagus, baby corn, pico de gallo, and an earthy squeeze of mushroom mayo.
