The beloved Malaysian kuih, onde-onde, and Aliyaa’s signature sweet appam are combined to create one stunning dessert—the onde-onde appam.

Onde-onde is a delicate kuih coated in grated coconut and filled with gula Melaka. Distinctly aromatic, the spongy kuih derives its flavour and colour from green pandan juice. Appam is a South Indian pancake made with a batter of coconut milk and fermented rice batter. Although originally from South India, appam is much loved in Malaysia.

Led by Chef Siva, the team at Aliyaa has married the two desserts. Bursting with fragrance from pandan, the bowl-shaped rice cake is spongy and pillowy in the middle, surrounded by a crispy, thin fringe. Topped with creamy santan, the dessert is finished with a sprinkling of coconut flakes and crushed nuts.

The rounder pastry consists of jackfruit-infused choux buns holding a crispy sphere of fried jackfruit. Biting down on the pastry reveals a welcoming crunch and aromatic fragrance.

In the case of the banana-based pastry, a tender slice of banana sits within the rectangular banana éclair, crowned with shavings of salty parmesan which provides contrast to the sweetness from the banana.
