Crimson Resort and Spa Mactan’s signature Spanish restaurant is back in full force with invigorated options from the culinary virtuoso of chef Chele González

As much as the new year puts the spotlight on revenge travel, it also comes as a time to revisit our favourite dining establishments both near and far from the metro. 

Enye by Chele González, the multi-awarded restaurant located at Crimson Resort and Spa Mactan, sets the perfect example with its highly awaited return, having opened on January 19. Offering a wide selection of traditional and modern Spanish specialities carefully curated by its eponymous chef, the establishment continues to indulge with its inventive yet authentic take on the cuisine, reimagining classic iterations for the Filipino palate through championing local ingredients and flavours.

It’s clear, not just at Enye but across many of his famed outlets, that González masterfully builds upon the comfort food of his youth and home country with discernable flair. Diners at the newly reopened Enye can expect many of their long-serving, all-time favourites to remain on the menu, from the delectably filling Cebu lechon tacos and supple gambas al ajillo to the showstopping cordero asado and quintessential paella negra.

With a number of new dishes to await as well, dining in at this gem in Lapu-Lapu City is indeed a must for both locals and tourists alike. Great food is always best paired with great wine—and so Enye boasts an extensive selection in its very own cellar. Located right by the restaurant’s entrance, the floor-to-ceiling display of wines is unmistakably a sight to behold and offers enough reason for an anticipated visit.

As the restaurant truly ushers a new start, day-to-day operations are now led by new chef de cuisine Raúl Cob, who proudly waves the banner of his hometown Valencia as he brings authentic Spanish gastronomy to our tropical shores. With the joint brilliance of González and Cob, Enye will certainly continue to wow our tastebuds (and stomachs) with a glorious ode to Spain.
