From now until August 31, Marrow transforms The Baker and the Bottleman’s first-floor dining room into a destination for quality steaks, unconventional cuts and flame-led cooking. While the menu retains the structure of a classic steakhouse, the dishes are defined by inventive flavour pairings. Think crispy barramundi croquettes with fermented soy bean and chilli aioli; Sichuan beef tartare enriched with smoked oil and confit egg yolk; and Typhoon Shelter-style roasted bone marrow paired with toasted focaccia.
The grill menu features Australian Wagyu bavette and New Zealand Lumina lamb, alongside mains such as yellow croaker with pepper and salted egg emulsion, and blue crab rigatoni. Save room for dessert: the classic tiramisu receives a chocolate chip cookie twist, while the Paris brest is reimagined with peanut praline and a drizzle of salted caramel.

From July 15 to August 9, Rosewood Hong Kong welcomes Mila, Rosewood Doha’s Levantine restaurant, for a limited-time pop-up at the hotel’s Botanical Kitchen. Guided by chef de cuisine Marc Mahfouz, Mila brings the region’s vibrant flavours to the city through a menu of elevated comfort classics. A selection of sharing mezze and pastries such as stuffed aubergine with tarator, walnuts and pomegranate, hummus with lemon and paprika, and Greek cheese pastry begins the experience, followed by artisanal Turkish flatbread with minced meat, 12-hour slow-cooked lamb shank and more. The experience extends towards the terrace, where a curated selection of shisha and cocktails await.

Black Sheep Restaurants’ popular dining series returns this month with an expanded programme of collaborations and chef’s counter experiences. From July 15 to 17, Taqueria Super Macho will host Los Angeles’ Tacos 1986 for evenings featuring flame-grilled specialities served on handmade tortillas. Meanwhile, Belon celebrates its tenth anniversary with a signature-led menu at the chef’s counter. Other highlights include a burger and Cornichon Martini pairing at Jean-Pierre’s Le Bar, a Hanoi-inspired brunch at Chôm Chôm and exclusive dishes at New Punjab Club.

On July 17, One Duck Lane and Sichuan Verandah at Hyatt Centric Victoria Harbour Hong Kong are joining forces with local collective Beat Friday for a fusion of Chinese cuisine and Cantopop. The event includes a seven-course menu of restaurant signatures, including honey-glazed barbecued pork, deep-fried chicken with Sichuan pepper and seafood fried rice, paired with free-flowing Asahi draft beer, prosecco, wine and more. From 7pm to 11pm, Beat Friday will spin a live DJ set of classic Cantopop hits.
The dinner and disco experience is priced from HK$748 per person, with standalone party entry available from HK$348.

Dynasty unveils new tasting menu

Executive Chinese chef Suen Kam Sing has unveiled the ‘Cantonese Rhythm, Urban Reverie’ tasting menu at Dynasty, reinterpreting traditional recipes with contemporary flair and tableside service.
The menu begins with cold fresh razor clams in plum sauce and deep-fried Taishan oysters with salted egg yolk, followed by shredded fish maw soup with fresh mashed fish, which transforms the traditional Shunde fish soup with tiger grouper. Cold marinated pigeon with plum wine presents the drunken delicacies of Chinese cuisine with a Japanese twist, while the sea cucumber-crowned steamed pork patty with shrimp roe and preserved vegetables with crispy rice elevates a home-style classic.
Available until August 31, the tasting menu is priced from HK$1,398 per person.
