Febbrile brings his popular Italian restaurant Fico to Tanjong Beach Club on September 28, trading East Coast Park for a beachfront terrace made for long lunches and charcoal-fired seafood
Three years after opening at East Coast Park, chef-partner Mirko Febbrile is bringing Fico to Tanjong Beach Club on Sentosa. The second outpost carries the restaurant’s sun-soaked take on Puglian cooking to a new stretch of coastline.
Febbrile has described the sun in Puglia as something closer to an ingredient than a backdrop, shaping everything from ripened tomatoes to the unhurried rhythm of the day. That idea has long been central to Fico, and at Tanjong Beach Club, the sea becomes an even more integral part of the experience, from the setting to the produce and cooking.
The Sentosa outpost trades some of the original’s heartiness for a breezier, coastal-Italian register, though the kitchen’s guiding principles of generosity and simplicity remain intact. Signature dishes carry over alongside new additions built specifically for the beach setting. Central to the menu is the focaccina, Fico’s own hybrid of focaccia and pizza made using a blend of semola and Tipo 1 flours sourced from Puglian mills, giving it a light, crisp, grainy character. Tanjong Beach Club gets an exclusive version topped with pesto and mortadella, layered with stracciatella and pistachios.

Handmade pasta remains a cornerstone too. The paccheri, designed for sharing between two, draws on the seafood pasta traditions of Adriatic summers, bringing together clams, squid and prawns in a heritage tomato sauce deepened with lobster bisque, while the Pappardelle leans into heartier territory with a three-meat ragu of beef, lamb and pork.
A separate beach menu is designed for guests eating straight off a daybed, running from burrata with San Marzano tomatoes to charcoal-grilled octopus with olives, capers and peasant sauce, alongside linguine vongole and tuna tartare.
Its beachfront setting has pushed Fico further towards live-fire cooking. The Sentosa restaurant houses an exclusive two-metre charcoal dome that traps heat, smoke and moisture around the ingredients, producing char and caramelisation while keeping everything inside tender, an approach rooted in the Puglian instinct to let good produce speak for itself with little more than olive oil, herbs and lemon.

The dome’s centrepiece dish is a seafood platter of squid, scallops, octopus, prawns and lobster, built for sharing, while the daily catch is dry-aged in-house before being cooked whole over charcoal with Italian herbs.
Pastry Director Jeanette Ow’s dessert menu keeps a playful streak running through familiar Italian staples, including a coconut panna cotta given a tropical lift with pineapple, mango and chilli, and a hazelnut bignè that nods to Febbrile’s own pastry-shop days, filled with Nutella and Piedmont hazelnut paste. The tableside tiramisu, a Fico mainstay, also makes the move to Sentosa.
The drinks list stays firmly Italian, with an easy-drinking spritz programme built for afternoons by the water, including a blueberry Aperol and prosecco spritz and a vodka-based cocktail with blood orange and grapefruit soda.

Above Fico’s new home at Tanjong Beach Club
Designed by Nice Projects, the 130-seat restaurant borrows its warm, earthy design language from Puglia’s traditional masserie, spilling out from the main dining room into a poolside terrace and patio. The fit-out threads together Puglian and Singaporean craft, from centuries-old Italian Luminarie lighting to ceramics from an 18-generation Grottaglie ceramic house, alongside dining tables made locally from reclaimed felled trees.
The result slots neatly into Tanjong Beach Club’s founding idea of Sentosa as a space for a few unhurried hours by the sea, one that suits Fico’s own belief in living better rather than faster, where lunch can drift into an afternoon by the water, then aperitivo, then dinner.
