Once again, Crystal Jade whips up a tempting list of CNY dishes with the likes of the famous yu sheng. Available at the Crystal Jade Jiang-Nan, La Mian Xiao Long Bao and Crystal Jade Kitchen outlets is the reunion baby abalone yu sheng, which pairs lo hei ingredients with Mexican abalone, pomegranate seeds and a sour plum and pomegranate dressing.

Emporium Shokuhin

The biggest Japanese grocer in Singapore felt inspired to give your CNY celebration a Japanese twist by creating the Shokuhin Fortune Yu Sheng. While the major ingredients such as raw salmon, cucumber, carrot, white and green daikon julienne are still present, the whole dish gets a lift with the addition of edamame, Japanese mandarin slices, yuzu peel and amberjack directly imported from the Ehime prefecture. Rounding off the flavours is the citrusy sauce made with yuzu mikan juice and plum sauce, among other things.

Golden Peony

In ushering the year of the red monkey, Golden Peony’s executive Chinese chef Ku Keung whips up his signatures, including yu sheng. There are four varieties with different ingredients, but our favourite is the Fu Lu Shou Tri-Star made with fresh abalone, lobsters and hiramasa (amberjack). The small portion is for two to five persons, while the large portion is big enough for six to 10.

Li Bai Cantonese Restaurant

The culinary team at Li Bai never fails to give us something to look forward to every year. They have created four platters of fortune prepared with ingredients such as salmon, ikan parang (herring) and three-head abalone. For a more festive treat, you can upgrade your platter by mixing and matching it with different ingredients like crackers, Boston lobster and crispy fish skin.

Available for takeaways, the dish is a lush assortment of fresh vegetables, mushrooms, homemade yam and sweet potato shreds.
