After bidding farewell to its home at Conrad Singapore Orchard, celebrated wine destination Park90 has found a new address at Pan Pacific Orchard—evolving from a destination wine bar into Singapore’s first fully integrated, sommelier-led luxury hospitality programme

After closing the chapter on its long-standing home at Conrad Singapore Orchard, Park90 reopened at Pan Pacific Orchard in April of this year with a far more ambitious vision. Rather than simply relocating its acclaimed wine bar, the team has reimagined how wine fits into the luxury hotel experience, integrating its programme across restaurants, private dining, celebrations and overnight stays.

It marks what is believed to be Singapore’s first independently curated, fully integrated sommelier-led wine programme within a luxury hotel, allowing guests to encounter the cellar throughout their stay, rather than only at the bar.

A cellar built for discovery

At the heart of the partnership is Park90’s cellar of more than 1,000 labels, spanning nearly every major wine region. Alongside First Growth Bordeaux and Grand Cru Burgundy are cult Californian producers, grower champagnes and rare library vintages, creating a collection that caters to seasoned collectors and curious newcomers alike.
The list features some of the world’s most sought-after names, including Domaine de la Romanée-Conti, Coche-Dury, Domaine Armand Rousseau, Domaine Fourrier and Screaming Eagle, alongside smaller, highly allocated producers such as Antica Terra, 00 Wines, Charles Van Canneyt, Jérôme Prévost and Bérêche et Fils. Despite the calibre of the collection, many sought-after bottles are priced more accessibly than expected.

Among the standout experiences is the exclusive Screaming Eagle Flight 2011, available only by the glass through a special arrangement with the winery. The wine is not offered by the bottle, making this a particularly rare opportunity to taste one of Napa Valley's most coveted labels.

A strengthened sommelier team

Leading Park90’s new chapter is an expanded team of wine professionals. Advanced sommelier Zhen Jie New joins as joint head sommelier, Singapore, alongside Terry Lim, who has been with Park90 since 2019 and holds both French and Spanish wine scholar certifications.

Overseeing the programme is Regional head sommelier Justin Ho, who will guide wine standards and sommelier development as Park90 prepares to expand beyond Singapore with future locations in Kuala Lumpur and Bangkok.

Dining with wine at its centre

Food has been designed to complement the wines on offer. The Neo-French menu was developed in consultation with Michael Wilson of Michelin-starred Marguerite before being brought to life by Pan Pacific Orchard’s culinary team, with every dish conceived to work harmoniously alongside the wines.

A rotating by-the-glass programme encourages repeat visits, while the cocktail list takes a similarly wine-first approach. Created with Anthony Zhong of Shin Gi Tai, the menu reinterprets familiar classics through the lens of wine, from the malbec-forward 90 Pointer to Bond or Me, built around chardonnay, alongside the pinot noir and champagne-based Elegant Fizz and Right Bank, an Old Fashioned-inspired serve featuring cognac and port.

Park90’s membership programme remains central to the experience. Members can expect a year-round calendar of tastings, producer dinners and verticals, with upcoming events featuring names such as William Kelley, Kei Shiogai and Sylvain Cathiard.

Current highlights include a members-only nine-vintage vertical of Château La Fleur-Pétrus (2008–2022), alongside back-vintage magnum flights of Château Pichon Longueville Comtesse de Lalande 1996 and Château Tertre Roteboeuf Saint-Émilion Grand Cru 1996.

Membership also extends beyond the cellar, offering preferential dining privileges, exclusive room rates, access to premium event spaces within Pan Pacific Orchard and, for top-tier members, invitations to visit leading wineries across Bordeaux, Burgundy and Champagne.

A stay designed around wine

The partnership also introduces the Park90 Stay Experience, available December 30, 2026. The package includes a minimum three-night stay in a suite, two-way limousine transfers, Pacific Club Lounge access with daily breakfast, afternoon tea and evening cocktails, as well as a bottle of Château Lafite Rothschild awaiting guests upon arrival.
Rather than treating wine as an optional indulgence, the experience places it at the centre of the stay—appealing to travellers who choose their destinations as much for what's in the glass as what's outside the window.
