Agave, of course, is the star of the night, but spirits lovers will appreciate the use of Siete Misterios mezcal and Altos tequila in the night’s lineup of cocktails.

The tipples are unorthodox, and include “Mushrooms”, a concoction composed of rye whisky and maple that blends sweet and smoky with the umami of mushrooms, and “Peas”, where lemon, absinthe and vodka meet the earthiness and sweetness of fresh peas.
