The rooftop restaurant and bar is ending the month with a bang, as they celebrate the last edition of the much-awaited Sky High Brunch this year. Join the four-hour afternoon affair featuring groovy live music, delectable Asian cuisine, and, naturally, bottomless Veuve Clicquot champagne and cocktails.

Take in the view as you sip on the likes of Tanqueray Smash, Pimm’s Cup and Berry Bellini. When hunger strikes, make a beeline for the eight dedicated counters including Raw Bar and Grill Station.

The former harbours a fresh selection of oysters, prawns and mussels, while the latter includes the savoury Wagyu beef sliders with kimchi and a tangy ssam sauce, as well as chicken katsu sando stacked with Napa cabbage and Kewpie mayo.

It’s an afternoon tea made for the sweet tooth. Fairmont Singapore’s very own pastry chef Yong Ming Choong has collaborated with award-winning pastry chef Johan Martin to craft a sugary feast, available until November 30.

Guests will first be treated to savoury creations comprising confit duck rillette, 63C organic egg with truffle potato and beer-braised pork belly with house-made steamed buns and parma ham.

As for the main event, both chefs will prepare pastry items using chocolates from the premium Cacao Barry brand. Highlights include Esmeralda cocoa with sable nut; viennoiserie rugoso chocolate with brioche; and mara de bois strawberry with popcorn. The afternoon tea also includes your choice of tea or coffee.

How can you resist a traditional Peranakan meal? At Violet Oon at ION Orchard, the culinary team is serving up two exclusive dishes—Nyonya hay mee and Nyonya assam laksa—alongside all-time favourites.

Both recipes follow the traditional method similar to how Peranakan grandmothers make these classics. The Nyonya hay mee soup comprises a rich bisque soup studded with Nyonya tauyew bak (pork belly that’s been slow-braised in Violet Oon’s soya sauce), locally farmed prawns and bean sprouts.

The Nyonya assam laksa is also a winner, thanks to its tangy-spicy broth beautified with fresh rice noodles, assorted vegetables and pan-fried barramundi fish.

The culinary team lead by Paolo Sanapo has partnered with Culinaire de France and Equipe de France de Gastronomie to bring gourmands this sublime four-course dinner with champagne pairing. It takes place from November 26 to December 1.

The sumptuous menu showcases the team’s penchant for modern European cuisine. So, you’ll happily dig into the likes of chocolate and egg yolk ravioli as well as pan-seared scallops artfully presented with burnt leeks, apple cider vinaigrette and lemon puree. These come with the Collet Brut Art Déco and Collet Esprit Couture, respectively.

Mains get more interesting, with a choice of smoked confit rabbit or Butcher’s cut Skirt steak, paired with the structured Collet Millésime 2008. For dessert, you’ll enjoy your Crepe Suzette with the fruity Collet Brut Rosé.
