Head to these establishments and savour some of the island’s best eats

Chefs around the island are welcoming the month of August with fresh menus. This week, enjoy the summer flavours with Caviar’s newly launched Gifts of Summer menu, or head to Restaurant Jag for its vegetable-centric menu that puts the spotlight on seasonal produce. Take a trip to the newly renovated Yantra and dig into authentic Indian fare. Before the week ends, don’t forget to make a reservation at Jaan by Kirk Westaway for its four-hands dining experience.

1. Caviar

Head chef Denis Jacques Lartigue now helms Caviar and has debuted a host of new menus that are sure to delight. This includes the five-course Gifts of Summer menu which showcases the season’s finest ingredients. The meal begins with the refreshing obsiblue prawns, a shellfish prized for its meatiness and sweetness. The prawns are minced and mixed with banana shallots and pickled apples before they are rolled with thin avocado slices. These pair perfectly with the tangy house-made chilli and mango kombucha sauce, and whet the palate for other tantalising dishes to come. Other standouts are the Sakoshi Bay oysters anointed with luxurious Giaveri white sturgeon caviar; and Hokkaido A4 Wagyu. The latter is a  beautifully marbled cut cloaked in a bone marrow crust and broiled until fork tender. Available from now until September 30. Book here.

2. Yantra

This Indian restaurant has reopened and offers an indulgent new menu. It was curated by Indian culinary historian Pritha Sen and executed by executive chef Pinaki Ray. The extensive menu puts the spotlight on time-honoured recipes like the Nizam’s Kathi kebab, an iconic dish from Calcutta, India. The dish is essentially a soft paratha topped with juicy mutton skewers grilled over charcoal until they are smoky and aromatic. Diners will not want to miss out on the Badal Jaam, a vegetarian dish of baked aubergine generously stuffed with sun-dried tomatoes and thick yoghurt. Yantra opens on August 2. Book here.

3. Restaurant Jag

Restaurant Jag is taking diners on a vegetable-centric gastronomic journey with its new eight-course discovery menu. The La Balade du Vegetal dinner menu has been curated around seasonal vegetables from France, Italy, Australia and Asia. Anticipate mouth-watering plates that commence with tantalising appetisers like romanesco. The green florets are prepared in five ways—torched, blanched, braised, raw, and pureed—with their fresh and nutty flavours elevated by herbs and caviar. For mains, dig into the likes of haricot verts, a simple dish of yellow and green beans blanched, sauteed and creamed until smooth. It’s crowned with pan-seared sea bass. Book here.

4. The Stamford Brasserie

Indulge in comforting gourmet bistro fare at newly revamped The Stamford Brasserie. Its refreshed menu boasts hearty classics like the TSB baked pork ribs and aquaponics tilapia. The former is a must try, comprising pork ribs brined with fresh herbs and spices before they are slow-cooked until fork-tender. These are generously glazed in a Grand Marnier jus and accompanied by crisp potato chips. The aquaponics tilapia is coated in a fragrant cayenne herb crumbs, pan-seared until crisp and succulent, and served with salad freshly picked from the hotel’s aquaponics farm. There’s no better way to round off your meal than with a pint from the bistro’s Beer Cart—go for the Saison Dupont, a light and creamy beer complete with earthy flavours. Book here.

5. Book Ahead: Jaan by Kirk Westaway

Chef Kirk Westaway will be collaborating with chef Adam Handling of London restaurant, Frog, for an exclusive four-hands dining experience. Exclusively available for lunch and dinner on August 9 and 10, the lavish meal highlights the best of British produce. Head down during lunch and choose from its four-, five-, and six-course menu; or dinner for its seven-course tasting menu. The menus put the spotlight on Westaway’s reinventing British cuisine and Handling’s skillful culinary techniques and feature dishes like beetroot meringue, succulent black Berkshire pork, and juicy roasted langoustine.
