The iconic Fullerton Hotel’s elevated status is given a food tribute with a six-course monumental menu featuring Singapore’s favourite dishes.
The Fullerton Hotel Singapore was declared as our 71st national monument in December 2015. To celebrate, Jade Restaurant’s executive chef Leong Chee Yeng created the Fullerton Monumental Dinner, available from 1 June, which features dishes inspired by the historic building’s rich heritage.

Its location near the Singapore River gave chef the idea of starting the meal with seafood — the beloved Singapore chilli crab meat with mini mantou. It’s served in a small bowl with one claw sitting in a rich and savoury chilli-tomato sauce. It’s got a bit of heat so to temper this, it comes with a side of stir-fried morning glory topped with a very soft and chewy baby squid and fermented bean curd. Completing the three-item starter is the beloved childhood snack of crunchy and deep-fried spring onion crispy prawn.
The next course is a piping hot and rich fish broth with a generous serving of braised abalone and deep-fried fish maw with shrimp paste. It’s served in stoneware, which not only keeps the soup warm, but also represents the grey Aberdine granite the building is constructed with. It’s a truly warm and comforting dish that will have you scraping the bowl down to the last drop.
The menu includes three main courses, starting off with sea grouper belly, steamed so the meat is fork-tender and succulent, before it’s topped with a piquant bean paste sauce with pickled leeks. Up next are two golden-fried pork ribs, an homage to Singapore’s iconic bridges — Cavenagh Bridge and Anderson Bridge. The meaty ribs are marinated for hours in a garlic base, so flavours are infused into the meat. The main is a dish of simmered noodles and a side of river king prawn.

Desserts represent The Fullerton Hotel to a tee. As the building used to be a post office, chef created “mail” out of pastry. It’s delivered with a refreshing coconut ice cream with mango sauce and strawberry slices, caramelised banana ball with a sweet and hard shell, as well as the mocha-like durian glutinous rice ball.
