Don’t be a creature of habit and explore these latest additions to the local F&B industry

It is only February and the local F&B scene is already getting buzzier with the opening of more dining concepts. There is something that caters to every palate—if you want to take a gastronomic trip to Europe, head to La Belle Epoque in Boat Quay or Aether in Tanjong Pagar for your weekly dose of modern European and contemporary French fare, respectively. Or better yet, dine in the sky at Latin-European inspired Sol & Luna, 1-Group’s newest multi-concept space located 17 floors up of CapitaSpring.

Master chef Taiga Kanekuni helms this newest Japanese restaurant, located at Regent Singapore. He presents three omakase menus—Ino Shika Cho, Ka Cho Huu Getsu, and Hi To To See—which consist of appetisers, nigiri sushi, miso soup and dessert.

Experience the full works when you order the 'Hi To To See' menu, which starts off with the octopus and monkfish liver. The perfect appetiser to whet the palate, the octopus is simmered in shoyu, sugar and sake for an hour to heighten the umami before flavours before it is paired with the rich and creamy monkfish liver.

For the nigiri sushi that follows, Kanekuni procures only the freshest seafood from his trusted single source for the past 10 years. In the current menu, you can look forward to the likes of grouper, sardine, tuna and surf clam, which taste like they have just been pulled from the ocean. These are paired with his unique version of shari, made with four different types of rice, and red and white vinegar. Book here.

Dine with a majestic view of the Singapore river at modern European restaurant and bar, La Belle Epoque. Chef Firdauz Nasir leads the kitchen and crafts innovative dishes using old-school techniques and accented with a variety of herbs from his own garden.

These are showcased in his Chef’s Garden menu, which includes dishes such as watermelon tartare. Bright and tangy, the watermelon cubes are delicately smoked and assembled with pomegranate pear cubs, pickled shallots and watercress salad. Finished with a generous drizzle of acerbic yuzu dressing. For something heartier, the fettucine nero is a toothsome mix of handmade pasta tossed in an unctuous squid ink sauce and accompanied with house-smoked salmon, pimentos and coriander. Book here.

3. Sol & Luna

Hospitality brand 1-Group has announced its latest and most ambitious venture to date—1-Arden, a multi-concept dining venue perched atop CapitaSpring. And, its first dining concept which has recently opened is Latin-European bistro, Sol & Luna.

Look forward to inspired creations, among which are the prawn and octopus niçoise salad and the truffle risotto. The salad is an elevated rendition of the French signature starring prawn and octopus grilled over lava stone; the latter is further slow-cooked in wine reduction before it is marinated in paprika oil. The dish comes together with the addition of baby potatoes tossed in olive tapenade, and served with quail eggs, cherry tomatoes and Spanish anchovies. Another masterpiece is the truffle risotto, cooked al dente and infused with truffle and mushroom paste, and white truffle oil. It is served with shavings of seasonal truffles. Book here.

4. Koal

Shaw Centre has become more vibrant with the opening of Koal restaurant, which is also under the Les Amis Group. Inspired by the flavours of Japanese, Korean, Chinese and Western cuisines, head chef Jun Xiang elevates his creations with the use of the konro grill.

Whether you drop by for lunch or dinner, there are a plethora of mouth-watering seafood and meat dishes to choose from. Among the standouts are the grass-fed ribeye and Iberico pork collar, which are cooked to a smoky finish on the grill and served with dipping sauces such as sesame chimichurri and whole grain mustard cream sauce. If you prefer seafood, the pan-fried salmon is given a lift with a creamy and tangy kimchi butter sauce. Book here.

5. Aether

Experience French joie de vivre in Singapore when you dine at this new contemporary French bistro, located at So Sofitel. Kick off the experience with an amuse bouche of Wagyu beef and oyster tartare, which is sure to please the palate with its meaty and briny flavours topped off with Kaviari caviar. It even comes with a class of Varnier-Fanniere Brut Zero champagne.

Moving on to the meal proper and you have starters like Truite De Riviere, or cured French trout decorated with grapefruit, avocado and fennel; and mains such as Le Poulet, or chicken ballotine served with potato gratin espuma and truffle sauce.
