2. Kimchi fried rice with Spam

Kimchi fried rice is tasty enough as it is. But throwing in some Spam into the dish can make it even better. Cooking a delicious bowl of fried that has a great flavour and is served warm is unmatched comfort food. Try your hand by following the recipe below!

Ingredients:

  • 2 cups cooked white rice 
  • 3/4 pound kimchi with juices 
  • 2 tablespoons (30ml) vegetable or canola oil, divided
  • 1 can of Spam, cut into 1/4- to 1/2-inch dice
  • 1 large onion, finely diced
  • 4 scallions, white and pale green parts only, thinly sliced 
  • 2 medium cloves garlic, minced
  • 1 hot red or green chilli (such as jalapeño, serrano, or Thai bird), stemmed and thinly sliced
  • Freshly ground black pepper
  • 2 teaspoons (10ml) Asian fish sauce
  • 1 teaspoon (5ml) toasted sesame oil
  • 1/2 cup chopped fresh cilantro leaves and fine stems 
  • Kosher salt
  • Fried eggs, for serving
  • Hot sauce, for serving

  • 1 brick of dried ramen noodles
  • 1 egg
  • 2 Tablespoons soy sauce
  • 1 Tablespoon brown sugar
  • 1 Tablespoon mirin
  • 1 slice of Spam 1/4" thick and cut lengthwise so that you have a square-shaped slice
  • Cooking oil
  • 1/4 - 1/2 cup of finely chopped cabbage kimchi

  • 4 ½ to 5 cups shredded cheese (about 20 to 24 ounces)
  • ¼ teaspoon ground white pepper
  • ¼ teaspoon ground black pepper
