When you think of fine dining in Malaysia, Johor Bahru is not typically the first place that likely comes to mind. After all, most of us tend to cross the causeway for the fresh seafood, stellar hawker fare and hipster cafes (of which there are many).

However, the fine dining scene, while less populated, is just as rich and imaginative with a multitude of international fare, omakase menus, the freshest produce and the most glamourous experiences.

1. Binchotan JB

You absolutely cannot go wrong when you are visiting a restaurant on Tatler Dining Malaysia’s Top 20 Restaurants 2022 list and Binchotan JB is no exception. 

The restaurant, which seats only 12 people at a time, serves up a variety of omakase menus featuring premium ingredients, creative combinations and intricate plating. 

Some of its stand-out dishes include its deep-fried French Squab, its premium handrolls and its fresh toro which is served with a punchy anchovy sauce and tomato salsa.

2. Kioku

Kioku, a restaurant conceptualised by Chef Shawn Shum, is a decadent presentation of nouvelle cuisine, a simplistic, fresh and lighter approach to cooking crafted by the French.

Using only the highest quality ingredients and different influences, Chef Shawn takes his guests on a gastronomic adventure with two omakase menus. 

The Pebbles menu is a fixed menu that features some of the chef’s personal best dishes. These include foie gras served with apples and cheese, shrimp served with fresh radish and tangy vinegar and more. 

The Meteorite menu, on the other hand, is a 12-course gastronomic adventure which allows Chef Shawn to stretch his creative abilities with seasonal ingredients, new cooking techniques and more.

3. Sushi Shin JB

Sushi Shin JB, a Japanese omakase restaurant in Johor Bahru, is one of the finest sushi restaurants in the city with menus that utilise the season’s finest ingredients.

While the menu is consistently changing, you will find fresh sashimi, nigiri sushi, mochi, sorbets and more.

Some highlights include its creamy uni served in an urchin shell, shirako (cod milt) wrapped with hirame (olive flounder) and served with a smooth yuzu soy jelly and more.

4. Spice Grill

Located near the Puteri Harbour International Ferry Terminal, Spice Grill is the place to go if you are craving Indian food. 

The restaurant serves up authentic North Indian cuisine and fusion dishes such as a giant sea tiger prawn served with creamy roasted garlic and a cheese sauce. Other favourites include tender Turkish chicken marinated in Caribbean spices and an Australian Wagyu ribeye that is grilled to your liking.

While the food is incredible, the view from the restaurant is even better. With floor-to-ceiling windows, guests can enjoy stunning views of the harbour as they dine.

5. Initial

Initial is a Modern European restaurant that prides itself on its fresh and sustainable farm-to-table concept that they carry out with a Japanese twist. 

Helmed by Chef Koh Chin Hong and located in a fairly nondescript location in Taman Molek, Initial has a number of set menus that vary in the number of courses they offer.

While the dishes do differ in terms of seasonality, you can expect freshly baked brioche with kombu butter, an otoro tart topped with creamy bafun uni and black cod served with dried spinach powder and dashi.
