Chef @johanne_siy returns to the F&B scene with the opening of @aro.singapore—her labour of love. Meaning "plough" in Latin and "love" in her hometown's dialect, Árō does not focus on a particular cuisine; rather, it reflects Johanne's lived experiences and the people, places, ideas, and encounters that have shaped her "creator's cuisine". Her debut menu is ingredient-led, showcasing lesser-known items such as pili nut, asin tibuok (salt), stingless bee honey, aligue (Filipino crab fat) and gamet seaweed. These feature in creative dishes including an aligue tart with spanner crab enriched with aligue emulsion, and pili nut milk custard with raw pili nuts, jícama, egg yolk sauce and Ossetra caviar.
