Cover Baristart Coffee Singapore brings Japanese café culture to our sunny island

Exceptionally rich and creamy, and with a tinge of sweetness, full cream Hokkaido BIEI Jersey milk is the secret behind the café’s delicious brews and food

When a cup of coffee turns out to be delicious, the beans always take all the credit. But if Stefano Manafe could have his way, the spotlight would be shared. “Most people forget how important good milk is to good coffee,” the deputy director of operations of Blue Waves, the parent company of Baristart Coffee Singapore points out.

The café prides itself on being the first in Singapore to use full cream Hokkaido BIEI Jersey milk in its full range of offerings. “Numbering only 800, brown jersey cows make up barely one per cent of the cow population in Hokkaido,” Manafe explains. “Hokkaido BIEI Jersey milk is rich and creamy with a tinge of sweetness—perfect to make a smooth velvety latte.”

Baristart Coffee began as a boutique craft coffee café in Sapporo, Hokkaido. As an independent name among the many chain brands that used to dominate the Sapporo market, it caught the eye of Mark Soetantyo, Blue Waves’ Managing Director, who was in the city for a business trip. A dedicated coffee drinker, he was not just impressed by the café’s brews, but also its concept and spirit. A chance meeting with Narimasa Suzuki, one of Baristart's founder, quickly blossomed into a business partnership that culminated in the brand making its way to our shores.

Manafe fondly recalls the early days of setting up the business in Singapore. “Both founders, Narimasa Suzuki and Yuki Takeuchi, who is also the global chief barista and two-time champion of the UCC Coffee Masters Latte Art Section in the Hokkaido region, are truly passionate about everything they do. I especially enjoyed taking ideas from both the Japanese and local team to come up with a concept adapted to the Singapore market. Learning about the different types and characteristics of Hokkaido milk, and how to combine them with different coffee blends to make the perfect cup of coffee was also and eye-opening experience.”

The abovementioned latte may be a signature on the menu, but it’s not the only item the premium milk is good for, nor is it the only good item on the menu. “There are many items I personally really like on the menu,” Manafe enthuses. “My favourite is to have a latte made with Baristart’s Dark Roast Blend and BIEI milk, paired with our famous Cream Puff. I also enjoy the Wafu Pasta and Hokkaido Tontoro Salad.”

The pride and joy of the café, the Cream Puff has garnered glowing reviews on many food blogs and in the media. “I consider it our most innovative product,” says Manafe. “It may seem like a regular menu item that can be found anywhere, but what makes it special is the amount of research and development pastry chef Emi San has put into it.”

“It is a balancing act to ensure that the natural sweetness and creamy texture of the BIEI milk are pronounced, yet do not overpower the other ingredients in the custard. The same can be said about maintaining a perfectly silky smooth texture in the cream.”

Above Baristart has set its sights on regional expansion and will soon be sharing the Japanese café culture with Indonesian coffee lovers

In the day-to-day running of Baristart Coffee Singapore, Manafe says that he is inspired by the “simplicity in concept, attention to details, quality, and hospitality” in the Japanese café experience.

Blue Waves has set its sight on bringing this experience to more customers in the Southeast Asian region, with Indonesia as its first target for expansion. “The Japanese concept is well accepted in most markets today,” says Manafe. “We also firmly believe in our unique selling point and the quality we can offer our customers.” A coffee roastery and pastry kitchen are also in the works.
