Chef-owner Tim Meijers of Tim’s Fine Catering continues to be a trusted partner for catering events with bespoke menus offering innovative canapés such as The Decennial Opulence

At the recent Tatler Dining Awards 2024 appreciation party held at the Tatler House on February 26, guests comprising chefs, restaurateurs and F&B industry professionals feasted on an array of beautiful and tasty canapés, main dishes and desserts. The man behind these mouthwatering creations is Tim Meijers, the Dutch chef and founder of luxury catering company Tim’s Fine Catering, who has been providing exquisite catering services for both corporate events and private gatherings on the island since 2013.

It has been a long and rewarding journey for the chef, whose humble demeanor belies his impressive culinary background and global experiences working in the world’s top establishments. “I started in Michelin-starred restaurants, which provided me with a solid foundation in high-quality cuisine and the discipline required to excel,” shares Meijers, who cut his teeth at fine-dining restaurants such as the three-Michelin-starred Oud Sluis in the Netherlands, the two-Michelin-starred Sketch in the United Kingdom, and the two-Michelin-starred Auberge de l’Ill in France. His global travels brought him to Asia and it was in Singapore where he got his first taste of running a catering business as Saint Pierre’s head of catering before striking out on his own. He hasn’t looked back since.

For over a decade, Meijers and his team have established themselves as the trusted partner for fine-dining level catering at various events, including cocktail parties, business luncheons, and buffet dinners. He specialises in modern French cuisine laced with Asian accents gleaned from his travels across the region, and this is evident in the bespoke menus that consist of signatures and new creations. Last year, Meijers created The Decennial Opulence for Tim’s Fine Catering’s 10th anniversary, and this exquisite canapé has been a highlight at many cocktail events including this year’s Tatler Dining Awards.

“I wanted to create a canapé that embodies opulence and showcases my dedication to exquisite cuisine,” says Meijers, who continues to profess his love for Japan, its culture and its cooking philosophy. Moreover, he wanted to introduce a new canapé which combines his passions for merging different cuisines and using beautiful seasonal produce.

It is, indeed, a cross of two food cultures with the base comprising a topinambur (Jerusalem artichoke) mousseline. Smooth and velvety, the mousseline perfectly complements the umami flavour of the dashi jelly, which is crafted from high quality katsuobushi and Rausu kombu that he discovered during his many culinary trips to Japan. This dashi jelly adds a rich depth of umami flavours, which are further enhanced by the generous topping of baeri caviar. An exquisite creation like this deserves a lavish presentation, and Meijers serves The Decennial Opulence inside small caviar tins that are elegantly housed in handcrafted teak wood boxes. While The Decennial Opulence is definitely a highlight, there are many more mouthwatering canapés and dishes to look forward to from Meijers’ culinary repertoire.
