Cover The Macallan Master of Colours is a groundbreaking dining concept that reimagines The Macallan’s Six Pillars through the language of haute cuisine

The Macallan’s inaugural dining series partners with three of Asia’s best chefs to create menus inspired by Natural Colour, one of the six guiding pillars in crafting its exceptional single malt whisky

Some legacies are not simply passed down—they evolve, shaped by time, nature and a quiet devotion to mastery. Since 1824, The Macallan has stood at the confluence of heritage and innovation. Founded by Alexander Reid, a humble barley farmer and schoolteacher from Speyside, Scotland, The Macallan was born of a singular vision: to craft single malt whiskies of remarkable character and uncompromising quality.

That vision, over two centuries later, continues to guide The Macallan. At the heart of its philosophy are the Six Pillars— the enduring principles that define every drop of its single malt. Among them is Natural Colour, drawn entirely from the sherry-seasoned oak casks in which The Macallan matures. No artificial additives—just nature, time and an unwavering belief in craftsmanship.

“The Macallan Master of Colours is an epicurean journey for like-minded culinary masters of Southeast Asia leading in cultural influence and relevance through their food creations, with The Macallan as the connector”

— Lai Ching Kok Managing Director, Singapore & Southeast Asia Pacific for Edrington

From the pale gold of sunlit barley to burnished deep mahogany, each of the whisky’s hues is a visual echo of the meticulous process behind them and a symbol of The Macallan’s dedication to authenticity and craftsmanship. At The Macallan, Natural Colour isn’t just a signature—it’s a symbol of purity, craft and respect for nature. And now, in a bold new chapter, those hues inspire a different kind of canvas: the plate.

In the world of gastronomy, this philosophy is mirrored by chefs who champion natural ingredients, seasonal produce and elevated flavours. This shared connection inspired the creation of The Macallan Master of Colours, a groundbreaking dining concept that reimagines The Macallan’s Six Pillars through the language of haute cuisine. Here, whisky and fine dining meet in a new kind of harmony. It’s a story told in six Natural Colours and six exquisite courses.

“Master of Colours is the merging of two worlds—the worlds of The Macallan and culinary mastery. We are deeply inspired by the idea of Natural Colour. It is a core part of who we are and the stories we want to tell”

—Amanda Hao Head of Marketing, Singapore & Southeast Asia Pacific for Edrington

A Shared Philosophy: The Six Pillars that guide The Macallan’s whisky makers in crafting exceptional single malt whiskies

1. Sherry Seasoned: Off White

Sherry casks significantly influence The Macallan’s robust character. The acquisition of Valdespino—one of the oldest and most revered sherry houses in Jerez de la Frontera, Spain—gives The Macallan’s whisky makers exclusive access to sherry-seasoned casks, custom-made to suit The Macallan’s specifications. These casks imbue the new make spirit with the depth, complexity and balance that have defined The Macallan’s whiskies for centuries.

2. Mastery: Red

The Macallan’s red colour harks back to its founder, Alexander Reid, whose surname means “The Red” in old Scots. Over time, this colour has become the symbol of the craftsmanship and dedication of the sherry wine makers, coopers and whisky makers in crafting exceptional single malt whiskies shaped by nature and time.

3. Curiously Small Stills: Amber

In the world of whiskies, size matters. Standing at just under 13 feet and holding around 3,900 litres of liquid, The Macallan boasts the smallest spirit stills in Speyside, Scotland. Similar in shape and size to the ones used in 1824, the stills were designed to maximise contact with the new make spirit and lay the foundation for The Macallan’s signature rich, fruity and full-bodied flavours. The decision to retain smaller stills reflects The Macallan’s steadfast commitment to quality over quantity.

4. The Macallan Estate: Green

Whisky comes from nature. The Macallan Estate, a sprawling 485-acre estate nestled within the rolling hills of Speyside, benefits from the Scottish Highlands’ abundant natural resources. Within the grounds stands the Distillery, an architectural wonder inspired by the Speyside landscape, as well as the Easter Elchies House, the spiritual home of The Macallan and an iconic presence on every bottle.

5. Exceptional Oak Casks: Brown

The Macallan’s exceptional oak casks are pivotal to the outstanding quality, distinctive aromas and flavours, and natural colour of its whiskies. Only American and European oak casks, meticulously crafted in the US and Spain to The Macallan’s exacting standards, are used. It takes coopers approximately five years to prepare these casks to the distillery’s precise specifications—a true testament to The Macallan’s patience, precision and unwavering commitment to excellence.

6. Natural Colour: Blue

Every colour of The Macallan single malt is purely natural and comes entirely from the interaction of the new make spirit with the exceptional sherry-seasoned oak casks. Achieving a spectrum of flavours spanning light gold to deep mahogany arises from this process, and this only highlights the whisky makers’ extraordinary skill, patience and dedication to their craft.
