Singapore-based chefs tell us where they go to for their Korean barbecue fix

One of the most popular areas for Korean food in Singapore is Tanjong Pagar, the unofficial ‘Korea Town’. The entire stretch is lined with scores of Korean joints teeming with hungry diners almost every night. Telok Ayer and Amoy Streets have their fair share of Korean BBQ restaurants to boot. Here tables are laden with platters of beef and pork of various cuts, ready to be given the welcome smoky treatment. The charred meats are balanced with piquant kimchi, dips, and an assortment of side dishes (banchan). We ask the following chefs for their recommendations for Korean BBQ in Singapore.

1. Go! K-Bbq

“I don’t eat at many Korean restaurants in Singapore, but one that I do visit sometimes is Go! K BBQ. The place is run by a Korean owner and his Korean team. They are especially good with their aged pork. The handmade Korean pork cutlet (made with pork sirloin)  and makguksu (Korean buckwheat noodles served in chilled broth) are also delicious.”
 
K BBQ is known for its range of aged meats, such as the aged black pork belly and black pork neck (Duroc). The restaurant uses a unique ageing technique, which takes about two weeks, to acquire a more intense meat flavour.

2. Pujim Bbq

“We enjoy going to Pujim, a Korean charcoal BBQ restaurant, for its selection of high-quality meats. We usually pre-order the ribeye cap cut. We call it the ‘prawn cut’ because the meat is shaped like a prawn. My wife, Lynn, enjoys Korean barbecue so I usually follow her recommendations. She loves Korean beef and wishes she could have it in Singapore, though it’s not available here.”

Pujim BBQ serves authentic Busan-style food, and a range of meats including premium A4 Wagyu, Iberico bellota and Duroc pork belly. Parties of four of five can go for the Pujim Shovel laden with five types of beef and pork.

3. Chang Bbq

“I love the communal, convivial atmosphere of Korean BBQ, and one of my favourites is Chang Korean Charcoal BBQ located within the Loewen Road enclave in Dempsey. It’s on the pricier side, but you get great quality and value. They have a nice selection of meats, and without fail, I'll order the thinly sliced Australian ox tongue that is deliciously melt-in-your-mouth. I also love the kimchi pancake that is topped with prawns, clams, mussels and squid as well as the comforting doenjang jjigae (soybean paste stew)."
 
This authentic Korean establishment at Dempsey offers a fine grilling experience with smokeless charcoal. The menu highlights include an extensive range of pork from Canada and Spain, and beef from the US and Australia.

4. Sin Manbok

“I like going to Sin Manbok not just for the quality of the ingredients, but because it closes quite late too, at around 3am. Sometimes after night service and if we still have energy, we will head there. It’s a good place to go and hang out with friends. My go-to dishes are the kimchi pancake, galbi short ribs and hot chicken feet.”
 
The eatery’s value-for-money menu also offers unlimited BBQ servings of pork belly, pork short ribs, beef brisket, fried chicken, stews and other hearty dishes.

5. O.BBa Bbq

“We’ve been to many Korean restaurants along Tanjong Pagar Road, but once we tried O.BBa BBQ (no. 63), we kept going back. The quality of the ingredients is great, and the meat has good marbling—it is better and very tender compared to others. Their kimchi is also amazing. It has the right amount of spiciness and sweetness for me. And their kimchi pancake is a must. The service is very friendly too. I always go for Set A, which is more focused on beef [GgokSal (prime beef), DeungSim (sirloin) and USamGeup (sliced beef short plate].
 
O.BBa BBQ’s menu is extensive; besides meats, they roll out a large variety of banchan. There are three outlets at Tanjong Pagar (no. 59, 63 and 77). Only walk-ins are allowed but they open till around 2am.
